I have stopped telling them it is low fat or whatever. Most of the time they can't tell anyway. If they want pizza, I fix an extra large salad and I have 1/2 a piece. My daughter is only 4 so sometimes what ever I might fix, she will not eat, so I alway keep single serve mac & cheese and spaghetto's on hand.

I usually eat smaller portions of whatever my husband makes. If you don't want to be cooking all the time, try planning your meals in advance. Sometimes we even prepare them ahead of time. You can cook them up on the weekends, or whenever you're off, and freeze them to be reheated later. As for water, I fill a 32 oz juice container with water and take it to school with me. I almost always finish it before coming home and I'll have another before going to bed.

I also laid it on the line last night and told DH that he needed to support me and gave him 2 ways. For me - i could use his encouragement my putting a bottle of "warm" water on the dinner table for me and by helping to pick up the little things around the house so I could get to sleep earlier. I figure if I don't have to pick up around the house before or while I'm getting dinner together then it really isn't a struggle for me to make something extra for dinner that would be conducive to both of our "diets"

I am definitely trying to get my family to eat healthier with me, so I encourage them to eat what I am eating -- More fruits and vegies, and baked fish and chicken, etc.

you may also want to think moderation. you can eat what others eat just slow down and have smaller portions. you may also want to add something extra like that fruit salad so that if you now make 4 things for dinner you add a 5th and you eat 3 or 4 of the 5 things you make.

BTW, I had dinner prepped tonight in 10 minutes. We had wild rice, chicken breasts with garlic and leeks, and asparagus. Toss pans into the oven to roast and cook for a while. When it's done, it's done. Everyone loves it! I season with whatever sounds good (today was lemon juice and pepper) that day and drizzle a bit of olive oil on top and it's set!

Last night, we had salmon on smashed peas. It was great! Also from cooking light. Look into Rachel Ray's 30 min meals. Most things can be made a bit lighter.

Check out Cooking Light. They have some great conventional recipes that they've lightened up a bit! Great recipes, great food. Also, you can look into Ellie Krieger's recipes (available for free from Foodnetwork.com) for some healthier alternatives. Lots and lots of options. Being healthy doesn't mean bland food or no desserts. It means making healthier choices and sometimes even making some bad ones!

Good luck! I love to cook so it's easy for me to find things. I'm also pretty adventurous in the kitchen so few things really scare me. And if I can do it, so can you.

BTW, some things you'll make won't be so great but most of the things you find, you'll love!

Have you ever looked at www.e-mealz.com? They have a low fat meal plan that has great healthier options for the family that you can eat, too.

I agree to try to make healthy subsitutions for the foods you love. Another one would be to maybe start buying the fat free cheese to flavor food. You can have pasta (make it whole grain) but just limit your amount. You don't have to slave over the stove just to make something healthy and you should just try to make one meal. He will get use to healthy food and might thank you for it one day.

Just make small changes to start with. You can still enjoy the things you love, just don't over do them.

First, start by finding substitutions that work for everyone. Will your husband at least try whole wheat pasta/bread/brown rice? Can you do oven-fried chicken strips or french fries? Would they be willing to have sweet potatoes instead of regular potatoes. A fruit salad instead of cake for dessert? Try different things and see - they might like the healthier options better (or at least be able to tolerate it for your sake :). Remember - this is a lifestyle change, so you need to find a menu that works for everyone. I still make my husband's favorites (steak, BBQ ribs, french fries) he just gets them less often and I have a much smaller portion size when we do eat it.

How do I cook healthy meals for my family and me included without depriving them of things they love and without me cooking 3 or four different meals at one time. My husband is in great shape...it seems he can think about exercise and get in shape. My oldest child is very active but I have gained a significant amount of weight after giving birth a year ago. I breastfed ( currently weaning) and I am trying to get back to my pre-pregnancy weight. My husband likes pastas, breads, cakes and so forth and I get bored and grab a cake and it seems like I gain weight instantly. I am very busy during the day so I can't spend all my time over the stove cooking me a healthy meal and then cooking dinner for the family. What is a simple way to solve this without taking time away from family and other things?
