Yes, it can be difficult to make something that everyone will like. I look at the recipes and see if there is substitues that I can do on the recipe that is close but not quite.
I avoid making two meals as much as possible. Children and husband have comprimised.
We meet in the middle. They know when I am "frying" things it is breaded and only done in olive oil. Still very healthy and I don't use eggs, I just wet it with water for the breading to stick good too. Lots and lots of spices.

It definitely is frustrating. For me, I definitely had to compromise. When I make pasta or rice, I make two pots, one for brown and the other for white. I have both 2% and non-fat milk in the fridge. Every once in a while (probably once a week) I make what the kids want or what DH wants. Most of the time I do a lot of making separate meals for everyone. Around twice a week, I make something healthy and they may chose to eat leftovers IF there are any. There have been a few instances when I have converted my kids to like what I make.
A suggestion for you and your situation: if the kids prefer fried foods, I would bake food for myself and fry theirs. It’s more pots to wash, but at least they’ll be eating.

| We have been eating more baked foods around here lately and my son is complaining because it isn't fried. I discussed buying healthier foods when we grocery shop and again I was brought down. I guess I will have to find some kind of medium that will make everyone happy around here.
