Scrambled eggs (theirs with cheese), turkey bacon and toast...yes, for dinner!!

Also (frozen) whole-wheat ravioli with cheese and a quick pasta sauce.

Homemade pizza is such a fantastic idea and I'm sure it's lots of fun for the kids. Not only do they get to contribute to making dinner, they get to pick out toppings they like. Such a great and fun idea.

Our favorite is homemade pizza. I use flat pita bread, pizza sauce (or tomato sauce with some seasoning it it), and lowfat/skim cheese...then everyone can add their own toppings.

I put the pita on a pizza pan and spray it with cooking spray and put it in the oven at 400/450 (depending on how fast you need to make it). I leave them in there to get a tad crispy (about4-5 minutes), taken them out, add sauce, cheese and anything else...then pop them back in until the cheese is bubbly.

The kids love it because they can add their own things. Then we cut up cold veggies on the side.

Stirfry is such a great idea and so easy. You can also buy fresh veggies from the store to make it better. I recently fell in love with Italian Seasoning. It is so good, especially in mixed vegetables. You don't have to use but just a little big of it to get the flavor. Very yummy in pasta primivera.

That is when I tend to fall into some standbys that I keep in the freezer. One of my favorites is stir fry - use whatever meat you have (or not), frozen veggies, add a little soy sauce and serve over rice. Or do sandwiches and serve with fruit. Kind of depends on what you have on hand, but if you are creative I'm sure there is something there! And stock up the freezer for the future! (I love having frozen veggies to use on hand.)

how about carrot sticks, Chicken breast sliced and sauted in some olive oil...with some rice on the side... or a salad for you mom...

rice or ramen noodles with either chicken or beef. We drain the noodles (but leave a little water to mix to combine the spices) and then throw in whatever protein we have left from the night before.

I will be in a bit of a hurry tonight and getting home pretty late. It will just be my 16 month old and I. I am looking for quick, healthy dinner ideas for us tonight because I have nothing at home and I really don't want to pick up fast food on the way home!

Looking for your ideas!
