Sounds like you are packing him a lot of different foods for one day and that can be a little overwhelming.
What I have discovered with my kids is that simple and less variety is better. I make sure the kids have a balanced breakfast of food I know they need to eat but not necessarily foods they will eat on their own. When it comes to packing their lunch, I make sure it is food they love and food they will eat. I am shocked at how much food kids throw out while at school because their parents are 'not watching'.
When using containers be sure they can be opened by the kids themselves. At one of my kids schools, the lunch is supervised by older children (not the teacher) and I'm not sure how 'helpful' those kids can be.
We also recycle at the schools here. So everything my kids take to school can be recycled (or composted) there or the containers are brought home.

| Thanks for the input. I meet with his teacher tomorrow, and I will definitely be discussing his needs and my "wants" concerning lunchtime. He went to pre-K last year, but only half the day, so he didn't eat there.

As a former teacher, I agree with the pp - let the teacher/school in on what you are trying to do. That way they are aware and can help and encourage, not only your child, but others as well. Maybe set up a reminder poster in the lunchroom area to remind kids about their items.

My advice is speak to the school as well. Maybe they have a recycling program at school where they have the bins out for the kids to put the proper items in. Which means you could possibly eliminate the thermos, which can and does take up a lot of room.
Also be prepared to have your child loose/throw out by accident Mom! the containers. My SD does from time to time. I have invested in the less expensive take and toss containers and wash them. These come in all sizes these days.
Fruit in itself is good too.
Reuseable ice packs are good too, depending on what you pack. I tend to use the freezable ice cubes because they are smaller and do not take up that much room. Plus they cost less and less likelihood of them all being thrown out unless the whole bag goes.

| Reducing waste is very important to me. My son is starting kindergarten next week and he will be taking his own lunch as he doesn't/can't eat red meat or dairy. I got him a cute canvas lunch bag, a thermos, and two containers. All that stuff takes up most of the room in the bag. I want to also be able to fit in a cloth napkin and possibly a small bag with other food in it. Anyone else worried about waste and taking lunch to school? I want there to be no waste from his lunch, like at home. Any helpful tips? Like good things to use as reusable napkins and bags.
