From experience, stretching and a day off once a week will help with the soreness. Even if you do 6 days of exercise, that is better than 5 - or none.
You have made some great changes, so be proud of those and certainly do not beat yourself up for missing one day.

Don't sweat it.
You should always have 1 day per week of rest, anyway. Also make sure to stretch before and after working out, and don't weight train on consecutive days. I go MWF for weights and TRS for cardio and take Sunday off.
Keep yourself stretched too it will help the soreness, just a bit of light movement will loosen you up.
