We're paying $17/ person for 8 items (we may end up doing a 'half and half' on 1 or 2 items so as to have 9 or 10 items instead). We're also paying a $300 flat fee for serving liquor (we provide the liquor ourselves, will probably be around $500), plus around $800 for service and tips.

Ours is pretty elaborate; the only thing saving it from being 'formal' is the fact that it's in the middle of the day instead of at night. That price quote is for pretty fancy items from a pretty high-end restaurant. I believe that you could probably find simpler items for as low as half that price, depending on the area where you live (which is a HUGE factor in the cost of catering altogether).

It depends how elaborate of a reception you are planning. We are looking into having a casual pool-side cocktail reception following a beach ceremony and I believe the quote we got was $19/person for unlimited liquor/wine/beer and for 6 different appetizers replenished for 3 hours
