Ceviche is traditionally cooked in the acid of the juice, and it does work. There are several reasons why I don't think mine turned out:
Too much seafood, not enough lime juice Too much lemon vs. lime (I don't think my limes were juicy enough) Too large shrimp Addition of other ingredients - particularly olive oil
I've worked with key limes before with no problem, but this recipe called for regular.
Anyway - poaching like you said is fool-proof! That's definitely the way we're going for the event. I'm willing to take changes with MY stomach, but not other people's!

If you have shrimp or scallops in your ceviche, you'll need to poach them first - the citric acid won't be enough to chemically cook them. Best of luck to you - don't forget to relax and enjoy your honeymoon.

Well, Monday night we went to the restaurant to taste-test the empanadas and deviled crabs we were planning on serving. They were HORRIBLE. So we went to two more places - both closed on a Monday night. Then we went to another place that said they didn't have the empanadas, but they could get us some, and they gave us a deviled crab to try. It was good - but they didn't call us or return calls the next day!
So last night we went back to one of the restaurants that had been closed. THANK GOD, they had awesome empanadas and deviled crabs, and they're willing to let us buy some platters. Whew. And the price is a bit less than the original, nasty place.
So then, I'd also made ceviche Monday night following a highly recommended recipe. But the darned seafood didn't cook in the lime juice - not even overnight! Well, our plan B will be to cheat and pre-cook the seafood before we marinate it the day before the party. Ugh....
And we're going to have to show up at the last minute on Saturday and ask for 10 orders of Patatas Bravas from another restaurant - ugh. They just can't get their act together to make arrangements with us in advance.
Things are finally coming together (we leave for Costa Rica tomorrow), but it seems like they are all falling apart FIRST!
