Got a deal on fresh blueberries! $2.50 for 2 pints of fresh picked berries - YUM!
So, I made the SP blueberry muffin recipe and the reviews are in! Ona scale of 1 - 10, they're a 10!
I'm using the rest of the berries in my cereal and just popping a few in my mouth for snacking.

i made the Cola Chicken last night. my son and i loved it (though i overcooked the chicken a bit).

definitely wins for brain-dead easy. 1 cup of ketchup and a can of diet coke. sounds weird but it works!

Hi everyone,
I submitted a recipe for cukes and vinegar but I think I forgot the directions! Oh, well...
I made SP recipe "Italian Crock Pot Vegetables" I ended up having to dump some of the veggie juice and adding tomato juice for flavor... maybe a 5 or 6 on the 1 - 10 scale.

I put my first recipe out there--it was tougher than I thought because, I'm a no-recipe kind of cook so I had to figure out amounts and cooking terms and all that good stuff-it's a vegetable fritatta, very lo-cal and lo-fat, so you can eat your bread with it!!!
We'll see how it goes.

My family did not notice at all that the Tuna Casserole an ole family favorite was slimmed down by no butter and only half a can of cream of chicken soup instead of all of it.
Last night, we made Ginger Pork Chops from the Kraft Foods recipe site.
It was a nice change. The Spaghetti Squash Mock Coconut Pie sounds interesting, but I couldn't find it either.

I made the Spaghetti Squash Mock Coconut Pie and it was DElicious! Great dessert and those with kids.......a great way to get a veggie serving your kids will go fo.....and maybe the Jello Salad I have submitted as a recipe, waiting hear if it was accepted.. Thank goodness I put the Mock Pie in my favorites, as now I can't find it. Does anyone know where it went. Many thanks to who posted it.

GET THE SMART BALANCE FOR BAKING,YOU CAN'T TELL IT FROM BUTTER! I USE THE LITE FOR BUTTER ON OTHER THINGS. I LOVE IT NOW, ITS LOW IN CHOLESTROL...AND CALORIES. OR AFTER ITS DONE, SPRAY ON I CAN'T BELIEVE ITS NOT BUTTER........O CALORIES...i USE THIS ON POP CORN, I USE IT ON BAKED POTATOES WAFFLES ETC.......VEGGIES, THAT ARE COOKING ON STOVE. I just did, it was really easy. I didn't share it because I want to see how the family reacts to what I just did to one of their ole time favorites. No butter. Imagine a Tuna Noodle Casserole with no butter. I am a little afraid.

Hi guys,
nice to see where you're all hiding!!!
I tried the Thai Turkey Salad, but used chicken cuz that's what i had on hand. It was delish-.
I tried lots of other ones, will have to go back and look in my notebook!!! I usually do the same as Okie, I am a good enough cook that I substitute ingredients for what's in season, or for dietary limitations.

I also am a T2, but very borderline, so have a little more leeway than some people, have had it under control by diet since the start (in spite of how much I used to eat, I ate the right things!!!!)

The Thai salad was probably a 9 on your scale.

The CookingLight website is another place to find good recipes.

One word for the NEW ORLEANS RED beans recipe - YUCK!
I normally love red beans, but this recipe is just awful... I think a lot of it is the thyme. Much too strong. Yuck! Yuck! Yuck!

Tonight I made the Sweet and Sour Stir Fry Pork. On a scale of 1 - 10, I'd give it an 8. Good flavor and decent size portions. Vegetables turn out just right - tender and crisp.

Sounds good Fitness,and I know what you mean about not cooking,my wife has always eatten healthy and is an inspiration for me.We share duties in the kitchen,and the stove is not used that much,(except for the broiler)for the past 6 months,lots of salads and fish,truck loads of fruits.Have a great day.

That sounds really good. I haven't cooked all week, I think I am having withdrawl. DH has been cooking everynight, he doesn't really like to cook what I consider to be a healthy wey to eat. I just haven't had time.
I made great chicken salad for lunch today using a roasting chicken we had on Sunday. I used lots of celery and a couple tablespoons for Fat free mayo, stick with only on slice of whole wheat bread. It made a good lunch.

Hi Deana,
I'm doing just great! Things are back on track here at the office, I'm still eating sensibly, exercising and drinking lots of water and today is Day 40 of no smoking!
I still weigh in on Thursday (like I used to for Boot Camp) so hopefully I'll have a new weight to post tomorrow! I guess I just didn't understand the Boot Camp thing and everyone posting the same thing seemed redunant, but anyway... I'm still doing everything the Boot Campers do, just not participating in the postings.
Hope everything is fantastic in your life today! One day at a time!

I always adjust any recipe to fit into my lifestyle,I use Splenda and salt-subs,Whole wheat flour,none fat milk or Silk,these have helped me keep my Blood sugar under controll and get off medication,(best of all lose weight)

OK, me again...
I made the Spicy Eggplant Dip and the jury is still out - it's quite a unique flavor. I think it's the fresh ginger...
Also did the Sweet Potato and Black Bean with Cheese. It was OK, but I won't be doing it again...

Hello Fellow Recipe Adventurers!
I made the Pasta Delight Recipe this evening and was kind of disappointed. Good veggies, good flavor, but very dry. Don't know why, but the veggies didn't make any "juice." Maybe somebody else has tried it and had a better result... I was thinking a few chopped fresh Tomatoes would have helped.

It is under desserts...
Apple Coffee Cake


Apples and raisins provide the moistness, which means less oil can be used in this low saturated fat, low cholesterol, and low sodium coffee cake.
5 cups tart apples, cored, peeled, chopped
1 cup sugar
1 cup dark raisins
1/2 cup pecans, chopped
1/4 cup olive oil
2 teaspoon vanilla
1 egg, beaten
2 1/2 cup sifted whole grain flour
1 1/2 teaspoon baking soda
2 teaspoon ground cinnamon



1.Preheat oven to 350º F.
2.Lightly oil a 13x9x2-inch pan.
3.In a large mixing bowl, combine apples with sugar, raisins, and pecans; mix well. Let stand 30 minutes.
4.Stir in oil, vanilla, and egg. Sift together flour, soda, and cinnamon; stir into apple mixture about 1/3 at a time just enough to moisten dry ingredients.
5.Turn batter into pan. Bake 35 to 40 minutes. Cool cake slightly before serving.

Yield: 20 servings--Serving Size: 3-1/2-inch x 2-1/2-inch piece

I made the 15 Minute Chili with ground turkey this weekend and it's pretty darn good. I'm going to try the vegatarian kind next week. Also finally made the Sticky Chicken and it was excellent! It's just me, so I've got lots of TV dinners prepared for later meals.

Oh sorry to hear about your Bandit, Glencorap. I have a big black one too, Toby, he's my special guy. The other two are very independent...they love us but they just aren't really into a lot of cuddling etc. But Toby is a love bug. My dog is a golden-retriever husky mix. Slowing down now, he's 12 or so. But he still has a LOT of energy when we take him for romps in the dog park.

Redhorse...right now we have two cats and a dog, as we recently lost our grand old man, Bandit, the black one. Top was three cats and two dogs. But our dog is a border collie and that counts as two LOL.

I live in New Mexico, so at least the green chilis are plentiful and HOT.

Me, I've got a picky, picky eater husband, but on the other hand, throw some green chili (and in his case cheese, not for me!) on whatever it is, call it Mexican food and he's happy LOL.

too funny -- cowpies! he must be a sweetie :). My bf is SO easy to cook for, I just love that about him. He appreciates and enjoys it all. My daughter is a different story, I comb through recipes going "nope..won't eat that...nope..won't eat that!" when I'm planning a meal she'll be at.

You know, I'm not surprised about the beef stroganoff...I checked that recipe out and it takes more than that to make a really yummy one...it's more time-consuming and you need other ingredients. Oh well, they can't all be winners!

Last night I made the beef strogonoff. I'd say it was average. Although I will add that my husband is always so amazed when I cook (it is so rare) that I could hand him a plate of cow pies and he would say "delicious!".

I am LOVING the recipe aspect of Spark -- I love to cook and try new things, and so far everything I've made has been a winner. Chicken Marsala, Wonderful Stuffed Potatoes (made that twice already!), Black Skillet Beef, and the Apricot Pork Chops. Yum. I do tend to change some things in them, I'm not the kind of cook who can stick to the recipe -- for instance on the stuffed potatoes, I don't use dill b/c I don't reallly like it, I substitute other herbs, and I top it off with a slice of trader joes' jalapeno yogurt jack. It adds 50 calories to each half potato, but for me it's totally worth it! These recipes rock. Can't wait to try more.

Hi,
I just found the Sticky chicken recipe a couple days ago and I've got a little hen in the freezer that will perfect for it. All this chicken doesn't bother me - I've always loved chicken and you really can't do anything wrong with it.
I've got my list ready for shopping day so I can try a few more recipes this week.

So far I've made the Italian Vegetable Bake, 20 Minute Chicken Creole and the Baked Eggplant with Mushroom-and-Tomato Sauce. All were excellent, but the Eggplant was my favorite!

I made the quesidillas with ground turkey. Loved it. Now, I am not a cook so I didn't have much to live up to. Lol. But I am a quesidilla freak so was happy to find a recipe that I could use guilt-free. I've also done the 10 minute chili (I think that is what it is called) and it was good. Obviously I go for the really simple recipes.

Hi Fitness....I recently made the apple coffeecake. It was pretty good. It makes a large cake to bring to a family gathering and at least have a desert. I think several seem very good. I'll try the Chicken Marsala one and see how it compares to mine. I'm trying to cook my family favs with less fat and sugars.Have a great day!

What? How did it turn out?

Last week, I made the Chicken Marsala, it was great.

Today, I tried the Ginger Spice Biscotti. Not so great.
