i love adding a few dried cranberries, toasted almonds/walnuts, and a little blue cheese - because the cheese is strong, you dont' need much for a lot of flavor.

Edamame! The frozen, already shelled ones are so convenient.

The BEST salad I ever had at a restaurant had chicken, strawberries, pecans, blue cheese crumbles, mandarin oranges, and some kind of viniagrette. awesome.

This is a great thread so many great suggestions. Many of them I have been doing for years. My salad base is Romaine and iceberg lettuce. Then I might add some canned diced Tomatoes if I don't have fresh ones, then I might add any left over veggies like peas, green beans, garbanzo beans or corn. If I have fresh veggies like squash or turnips I would put some in my salad. Some days my salad base turns into a fruit salad with grapes, mandarian oranges, apples, grapes and/or what ever I might have. I keep lots of canned fruit in fruit juice (lite) for when I don't have fresh fruits.

I like ranch dressing with any kind of salad but lately I have been using olive oil with apple cider vinegar and some garlic powder.

Also salad are great with mushrooms, olives or any kind of nuts.

I like to add different things each day so I don't get "bored." I also try to add a few "tasty" things, sometimes all the veggies blend together and can taste "blah" (especially since I don't add any dressing). I will add some cheese, egg, cranberries, strawberries, chicken, manderine oranges...just something different. My tastebuds usually thank me. And as others have noted, if I add protein it keeps me full longer than a regular veggie-only salad.

Whatever looks good when I open the fridge and cupboard to see what's there (I make soups the same way). When using an oil & vinegar based dressing, I often include some cereal, such as shredded wheat or Grape Nuts, to help sop up that yummy dressing. I'll admit I'm not a recipe person. recipes give ideas; I prefer to wing it for most things.

anything crunchy! especially McCormick salad toppings. Oh, and I must have small pieces of green jalapeņo peppers and onions to spice up my salad. I usually do this every salad! Trust me, my upper respiratory glands are very clear after I'm done eating! lol

I use the pasta seasoning or the 21 seasoning from Trader Joes. It gives it more flavor and you don't seem to use as much dressing. I also put red & green bell pepper, some chili peppers, tomatoes, shredded carrots, and whatever other veggies I may have on hand.

Bacon bits (20 cals per TBS) a little cheese, some nuts (cashews are awesome)! i also add in green onions, shallots, red cabbage, tomatoes, brocoli, fresh ground pepper, other seasonings like garlic.

I also use balsamic vinegar and olive oil. It has a wonderful taste and is so good for you!

My salad that I take to work about 3 or 4 times a week consists of half a raw zucchini, slices of cucumber, cherry tomatoes, raw mushrooms, scallions, carrot, 120 grams of chick peas and 50 grams of halloumi cheese, topped with half a tablespoon of flax oil.
Really tasty, nutty and filling (for about 425 cals).

I've found you can put just about anything in a salad. Whenever I cut up fresh veggies for a meal I will set some aside for salad making (bell pepper, mushrooms, onions, etc). For protein I love to add a boiled egg, left over grilled chicken, or garbanzo beans. Seeds and nuts are always good, sunflower, walnuts, pumpkin seeds. Don't forget raisins, these add sweetness. apples mix well with salad too. Alfalfa sprouts are my favorite treat for salad, bean spouts would work well too. Fresh spinach is great, try different types of lettuce also. spinach with green onions, bacon bits, and lite Italian dressing is a great change of pace for me. I love to take salad in my lunch, so I try to mix it up every day. Any type of fresh veggie will work well, whatever you like.

I can second that...if you eat too many walnuts they do make you physically sick, but how I love them!

There are so many different ways to make salad, not just the usual leaf, tomatoes, etc. Humus is good, but is not salad. Olives are great, but high in oil. The key here variety. Add the vegetables you like. Some pine nuts, walnut etc. nuts will fill you up, and it is good for you, but not to much. Too much of anything is not good.

I like mediterranean food so I add hummus and marinated olives. The olives give it lots of flavor and the hummus has a texture you don't don't get with most salads.

anything really! I love grapes, walnuts, apple chunks, dried cranberries....creative is the name of the game! I use to think of salads as rabbit food...I am not fond of iceberg lettuce...but then I discovered spinach! WOW! I love salads now! And oh the endless possiblities! You can add meat (watch your sodium though) you can add fruits and veggies...snap peas, baby peas, carrots...heck corn if you really wanted too! Them rabbits have the right idea! I mean, after all...they eat all that stuff and can still run through a chain link fence away from a big dog no problem!
