I love warm salad dressings and have been using vegetable broth in place of the olive oil with delicious results! Just saute onion and garlic and peppers or whatever you like in the veg broth and deglaze with a few splashes of balsamic and it comes out "thick" enough to coat your greens with no oil! i like it over arugula with crumbled soft goat cheese and dried cranberries....Yum....

I made this salad yesterday for my mom and family for a mother's day dinner and everyone loved it and I especially thought it was delicious. So, I just wanted to share it with everyone. I know the feta makes it a little high in fat but I got a low fat feta cheese. Plus all the wonderful nutrients in the spinach make up for it! Ingredients: 1 9-ounce bag fresh spinach leaves 5 tablespoons olive oil, divided 1 medium red onion, halved, cut into 1/3-inch-thick wedges with some core attached 1 7-ounce package feta cheese, coarsely crumbled 2 tablespoons Sherry wine vinegar
Preparation: Place spinach in large bowl. Heat 2 tablespoons oil in heavy large skillet over high heat. Add onion; sauté until brown and softened, about 7 minutes. Transfer to bowl with spinach; remove skillet from heat. Add remaining 3 tablespoons oil and cheese to skillet. Stir to melt cheese slightly, about 1 minute. Stir in vinegar. Season to taste with salt and pepper. Pour over spinach; toss to coat and wilt slightly.
