I could eat fish every night of the week! Of course there isn't much that I won't eat!
We use a lot of Tilapia. I like to make myself Tilapia Tostadas (on site) for lunch once a week. I also make Blackened Tilapia sandwiches, Fish tacos, fish soup, etc....

I had "Unbaked Ziti" - Whole Wheat Pasta, tomato sauce, part skim ricotta, low-fat cottage cheese, reduced fat shredded cheese (this is really baked ziti without baking it - I put it on stovetop - it is much faster to prepare and for some reason, my family loves it this way - they barely touch it when it is baked!). Also had grilled eggplant and onions again (they were so good last night!).

The Tilapia sounds really good.

Tonight I had a Boca Lasagna - since it had been in my freezer for forever - wasn't too bad at all. I would consider buying again. I also had a large orange pepper with some semi-homemade spaghetti sauce.

I made chicken parm with fusilli for the family, which I could have eaten without any "problems" but had decided earlier to have the lasagna .... I could hope for leftovers :D

Baked Tilapia with a side of steamed green beans :)

I've made this before! It's so simple and tastes really good too.

1 tilapia
1 large tomato, slice
.5 onion, sliced
1 lemon, sliced
salt and pepper to taste

Combine all ingredients in foil and stick in the oven and bake until cooked. YUMYUM! I eat this with some kind of steamed veggies (no need for dressing since the lemon juice will be tasty enough) Tonight i'm just having green beans.

Seasoned pork tenderloin medallions, a small amount of wild rice, and broccoli. Doesn't sound nearly as fun as meatloaf and mashed potatoes :(

Yum, meatloaf and mashed potatoes sound good. That might be on the menu for tomorrow night. Tonight though, I think I'm going to try this Spark recipe: recipes.sparkpeople.com/recipe-detail.asp?recipe=315.

Or, I recently bought the cookbook The Food You Crave by Ellie Krieger. I might try her Savory Chicken Chinese Salad ( fitbottomedgirls.blogspot.com/2008/06/fitlit-food-you-crave.html) since it's so hot outside!

Meatloaf, mashed potatoes and combo.

Mom's Meatloaf:
1 lb ground round
1 cup bread crumbs
1 cup milk
1 egg
1 med onion diced fine
1 teasp salt, 1 teasp pepper 1 teas allspice
Mix all together and bake 1 hour 350 degrees

Combo
Chop an onion coarsely and saute in butter. Slice the zucchini and add to the onion. Throw in some mushrooms for the last few minutes and enjoy.

Mashed potatos
boil little new potatos in their skins. Drain, smash the with a little sour cream and minced garlic.

Since I live in Florida and we are moving into our "hot season" I tend to grill in an effort to keep the house cool without increasing the A/C usage. Therefore we eat a lot of fresh fire grilled veggies and rice with our entrées. There is nothing, in my humble opinion, that tastes better than fresh grilled veggies and meats. Tonight I am doing zukes and yellow squash with green onions & Tomatoes grilled and served over white & wild rice and served with salmon for my husband & I and skinless chicken breasts for the kids! All of it, and I do mean all of it, done with the same marinade of olive oil, fresh ground pepper, everglade seasoning, sea salt, fresh lemon juice, and roasted garlic! Quick, easy, light, and tasty fare!

Hello Ivy, how old are you? If you are trying to lose weight, be sure your parents will help with your goals. You shouldn't have just pasta for dinner, because you will feel hungry again very soon after dinner. Have veggies and some kind of meat, a piece the size of a deck of cards. half of cup of pasta to go with it is also good. I hope you reach your goals!

Last night I had leftover chix breast (bbq) with a whole sliced tomato and 2 pieces of rye toast, and guess what? I actually enjoyed my meal and it was so low cal, low fat!

Tonight we had steak on the grill with grilled eggplant and bermuda onions. A little homemade pasta salad on the side, made with whole wheat pasta and light canola mayo. It was yummy! Love our new grill!

Yes it is a very little indent and slightly brownish. Kinda like how Tomatoes have a top and a bottom. This is on the bottom of the eggplant.
Choosing one with an oval shape worked last time. I bought one yesterday so we will see if it works again.

Tonight I think it will be sub sandwiches and sechwuan salad.
This is if we go for a ride. If we stay home I will make chicken burgers. and have the salad.

You mean a little indent on the bottom of the eggplant?

We're having roast chicken, fiddlehead greens, and I' haven't decided if I'll boil the new potatoes or mash the russets. Strawberry-rhubarb pie for dessert. Yeah spring!

I have had a lot of hit and miss with the eggplant but when I get a good one I love it and when I get a bad one or bitter one I dump out the whole dinner.
I have never been able to get the salting thing to work so no I didn't do that. But someone suggested to me to make sure and check the bottom of the eggplant. If it has an oval shape (kind of an indentation and mark like is on a tomato) rather than round then it shouldn't be bitter. Last time I was very careful to pick one out that was oval and it was amazing.

I changed what I was making for dinner too.
We had portobello mushroom burgers instead. I got a good deal on them and had to try it. I liked it. Very tasty and easy.

Chana Masala (curried chickpeas) with carrots, brown basmati rice, and a balsamic coleslaw (no mayo, just balsamic vinegar) with cucumbers and tomatoes. For dessert, plain nonfat yogurt, apple slices, and almonds.

Labeille, I never bother salting and draining my eggplant, and I seldom have a problem with bitterness.

Did you have to do something with salt and paper towels before you cooked the eggplant? I recall my mom doing that, so I'm too timid to serve it other than grilled or in curry.

Tonight it is chicken/veggie burgers.
I add tons of ground veggies to my ground chicken and then lots of spices and the burgers are so good that my family prefers them to your normal burger.

Made an eggpland dish the other night that one member of my family told me tasted like you ordered from a fancy resturaunt. That was a nice compliment. And at about 125 cal a serving can't beat that.
Just "fried" in pam, thin slices of eggplant and set aside.
In a different skillet I sauted onions, mushrooms, zucchini and grape Tomatoes toward the end. When everything was soft I added a can of stewed Tomatoes and let it work together for a few minutes. Drained it a little and served that over a few slices of eggplant. Top that with a pinch of parmesan cheese.
It was so flavorful.

Love this thread it gives so many ideas.

Wanted something easy - so it was Mac and Cheese please.

I made Kraft Mac and Cheese (individual serving)per package directions and added 2 TSP of AnyWhey protein powder and set aside. Sauteed a few grape tomatoes, celery, onion and some orange pepper in some pam, added Mac and Cheese and a little parm cheese, broiled for a few minutes to melt cheese. Had a side salad of Tomato, onion and Cucumber with FF Feta cheese and a few sprays of Asian Silk dressing.

Very easy and very filling.

Boneless pork chop with mustard-tarragon sauce, roasted new potatoes with pesto, and steamed peas... so good.

I made the sauce up as I went along:

pan-seared the pork chops in non-stick pan with a bit of oil misted into it.

when seared, put the pork in the oven to gently finish cooking in the middle

add a little chicken broth & a squeeze of lemon to the pan, add some shallots or garlic as well, let reduce by half

add a bit of mustard - I like a honey-dijon style for this, or regular mustard & a touch of honey

add a tiny bit of half & half or cream or sour cream or even plain yogurt (preferably drained like greek-style) and some dried tarragon. simmer until thickened & pour over finished pork chops

You guys are so funny. I've encountered that chop suey/goulash thing before. In Canada (and as far as I know the rest of the world), chop suey is an American Chinese dish with noodles in it (except in Maine) and goulash is a Hungarian meat stew heavily flavoured with paprika. And we call ground beef with pasta "ground beef with pasta".

And we're having chili for supper.

My kids call it delicious !!


1 pound ziti or pasta of your choice
1 pound ground turkey
1 small onion choppped
1 small green pepper chopped
2 cloves garlic or more if you like
1 jar your favorite pasta sauce

Saute onion, green pepper and garlic , then add the ground turkey. Boil the pasta to box directions in a big pasta pot with a cover.
Drain pasta and and when turkey is done, mix all ingredients together back in the pasta pot and it will ok to eat later !

I'm just curious as to what all you sparkers out there like to make for dinner. I find my cooking gets uncreative after a while. I love to cook but find myself making the same stuff all the time.
