Help... Crockpot southwestern chicken tips needed

I haven't made the recipe, here's my take on it.

Chicken tenderloins would be fine. I think I would cook the rice separately, replacing some of the water with chicken broth. That way you can serve the chicken over the top of the rice. Baking it in the oven might be better than the Crockpot with the tenderloins though since they are so much smaller.

Ok... so I am going to attempt to cook a healthy meal (and I do not enjoy cooking) using a crockpot. I choose the "Crockpot Southwestern Chicken" recipe found on here. After reading the comments, some people have added rice and then served it on a tortilla.

This recipe sounds tasty and would probably look great with all the colors - a great "impression" meal - heehee... here is my question...

It sounds like I add the rice an hour before the meal is done, but how do I know if I have enough liquid? I don't want to end up with a soup.

Also, can I use chicken tenderloins instead of chicken breasts?

Any help would be appreciated!!
