I buy them already cut up at Trader Joes. They are in a package that you cut off the corner and microwave. They are fine in both flavor and texture. I have never heard what the previous poster said but I know regular potatoes don't like the fridge and get kind of soft and gummy but I would guess you could put them in a zip lock bag and they would be fine overnight.

I have read on many sites that refrigerating a sweet potato can ruin the taste and texture, so I would not try to do the prep work in advance.
Found on another site:
Sweet Potatoes/Yams Store sweet potatoes between 55°F and 65°F in a dark, dry, cool place, for up to one month, or use within one week if stored at room temperature. If refrigerated, their natural sugar will turn to starch and ruin the flavor.

I was wondering if you peeled and cut up sweet potatoes a day early will they turn brown like potatoes would? I'm cooking sweet potato fries for Easter dinner and was hoping to do some prep work on Saturday but don't want the sweet potatoes to go bad if I prep them the day before. Any help would be greatly appreciated.
