I know I am late posting this but for Easter we had our traditional Easter Brunch. The time of dinner is about all that is routine though. Every year (now that the kids are older and it is an adult brunch) I try new dishes. This year we had salmon cakes w/hot artichoke dip, roasted chili/honey sweet potatoes, crab stuffed mushrooms, melon/cucumber dish with apple gazpacho and mini lobster egg bakes. All made with low fat ingredients (when possible) and all yummy. My husband is Celiac so all gluten-free as well.

I finally figured it out! A cheese and fresh fruit platter,ham, baby spinach and strawberry salad, roasted asparagus, baby carrots, green beans with almond slivers, mashed potatoes that I WILL NOT eat and mashed cauliflower that i WILL eat and homemade dinner rolls that I WILL eat LOL Of course a cake but i wont eat that either. That looks like a lot of cooking

We'll have our traditional ham, brisket and scalloped potatoes but this year we are trying to health things up a bit with sides of salad, (I'm using a raspberry dressing that I got from Tastefully Simple over fresh greens with raspberries, slivered almonds and just a sprinkling of blue cheese.) dill dip and veggies, a fresh fruit platter, and whole wheat rolls. Then I'll work on portion control for the potatoes! :-)

| sweet potatoes are my new fav! the other night i cut them into little chunks and tossed them with olive oil and thyme. they were delicious!

| Wasabi mashed potatoes are awesome! I know I am fixing a ham, mashed potatoes, fresh peas with pearl onions but no idea what else.

I am cooking Easter dinner and we are having the following:
Chicken Cordon Bleu (low fat) Asparagus w/ portobello mushrooms Zucchini Oreganato Wasabi Mashed potatoes Sweet potato fries - baked Ham steak (for my niece who just loves ham)
Bunny cake for dessert

I am making a low fat lasagna but not telling anyone...and see if they can tell the difference.
I will be using ground turkey instead of beef skim milk ricotta skim milk mozzarella
I am hoping by the time it is cooked and covered with sauce, they will just eat it

You can sub the ricotta cheese with silken tofu in recipes. Nobody can tell the difference.

When I make lasagna, I use some cottage cheese for some of the ricotta & it's yummy!
You can always make healthier versions of family favorites. Whole wheat rolls, LESS butter in the potatoes, & steam up lots of veggies (easy on the butter or go nuts & just put the butter on the side!), a veggie tray & tossed salad for starters is always yummy & good for everyone.

| My family has a traditional Easter Pie. It is made of eggs, italian sausage and ricotta. How do I make this lowfat? I have never tried using cottage cheese instead of ricotta. Does anyone know if it tastes as good? ahhhh.

My best friend is vegan.........she makes Tofurkey for herself. For hubby she makes a ham and for the group she does a turkey breast. As for trimmings like my family she does mashed pot's, candied yams, tons of steamed veggies and steamed rice,breads and desserts. Your vegan could eat all those trimmings as long as you do not make anything with chicken stock base. You could maybe do a simple stir fry of veggies and have a veggie tray. If your vegan friend does not do eggs or milk products you can make simple boiled pot's, drain them add in some fresh mint and salt and pepper to taste.
My Mom makes a jello (lime) carrot (shredded) pineapple (crushed) salad that is delightful, must mix it all together & let it set.
We do fried green beans but you could do that green bean casserole. Used cauliflower for your mashed veg instead of pot's.
Hope this helps some and check out the recipes here as there are tons for holidays and for vegan meals as well.

I have a vegetarian, a vegetable hater, a ham hater just to name a few family members. I was wondering what everyone else was cooking so I could maybe steal some ideas!

GLAD THAT I CHECKED IN BECAUSE THIS WAS HELPFUL.
THANKS FOR THE GREAT IDEAS. IT IS TRUE IT IS ABOUT family AND CELEBRATING THE HOLIDAY. PORTION CONTROL IS THE ANSWER.
I KNOW THAT IS WHERE I HAVE PROBLEMS. I KNOW EXACTLY WHAT I SHOULD DO BUT I HAVE PROBLEMS WHEN I AM OUT TO dinner OR HAVE A GATHERING.

Although we are into a new lifestyle like you say the whole family may not be doing that. So......................I say cook your usual holiday Easter meal. Do the ham, mashed pot's with butter, rolls and trimmings. Do it all!!!!!!!!! Just remember that there are ways for YOU to not fall apart at this time no matter what is put on the table.
Drink lots of water that day, do your usual workout if you can work it in. Make a nice veggie tray so you can snack on that kind of good stuff................ And when it comes time for the meal, PORTION CONTROL is the key...............PORTION CONTROL. Have a bit of every thing, eat in moderation and when you are done with 1 plate..............move it to the kitchen and rejoin the others and have wonderful conversation.
And have that 1/2 a slice of a slice of pie or cake. Do some extra time working out the next day.
Holidays are there to enjoy with our families and food is there for us to enjoy as well. Just treat it like any other day and any other meal.........you will be fine.
