Risotto is one of my favorite dishes in the world!! Unfortunately it loves to stick "on" me, too! I love it with asparagus and parm...with wild mushrooms...with saffron...you name it.
I know it can be a main dish, but I've always served it as a side with a protein...and any protein is great with risotto! seafood is wonderful, but so is pork, chicken and beef.

Hi there, I love to take a tbsp of olive oil and salt and pepper in a saute pan. Add scallops and cook until a golden brown. It is delish! Enjoy!

| I LOVE the Spark People recipe for vegan Artichoke Risotto - It has tofu in it, so you get the added protein. It's really filling on it's own. I experiment with it a bit - I've added asparagus, and used different types of rice. My boyfriend loves it too, and it's hard to get him to eat much "healthfood".

a fork!!! just kidding! As has already been said.. it can be a main dish with added protein or a side dish if you serve a smaller portion. It also depends what recipe you have (I mean, what's in it?)

| Its good with baby peas and a little Parmesan as well for a side dish with broiled fish.

RISOTTO CAN BE A MAIN DISH IF YOU ADD SHRIMP
AS A SIDE DISH YOU COULD HAVE IT WITH GRILLED CHICKEN, STEAK OR ANY PROTEIN.
IT CAN BE MIXED WITH SAUTE OR ROASTED VEGGIES AND BE A MEATLESS MEAL.
