I like to stand them up in a coffee pot with enough water so the tips don't get wet. Sometimes I put the cover on so they cook faster. Serve with olive oil and salt and pepper.

The first time I ever had fresh asparagus the neighbor who gave it to me said she liked to just snap them off as they came up and eat them! I tried that and then tried dipping them in salad dressing. MMMMMM! Nothing tastes better. If I can't get really fresh asparagus then I very lightly steam them, so they are still crispy but hot. Maybe a little salt. You don't want to cover up the flavor. This is a very delicate vegetable, so it doesn't take very much cooking. As a kid, I always ate the canned variety. Yuck! Totally different taste. Try them in salads, too. Uncooked.

I know I'm a little late to help you with your dinner dilema, but for the summer keep in mind...

Grill asparagus (if you like soft asparagus, boil it for 2 minutes first). Drizzle lightly with olive oil. Sprinkle with salt & pepper. Then grill for 5 minutes (rolling 1/4 turn every minute or so)

I like them steamed in the microwave. I add just a few squirts of spray on butter and a few drops of lemon juice.

Green and white asparagus salad is my favorite.
500 g white asparagus (thick stalks)
250 g green asparagus
½ red romano pepper
1 handful tarragon leaves (roughly torn)
For the dressing:
2 tablespoons lime juice
2 tablespoons fruity olive oil
1 tablespoon rice vinegar
1 teaspoon runny honey
some white pepper and salt to your liking
First, peel the white asparagus. This is done from the top down, start just under the tip and carefully remove all the thick skin.

Snap the green asparagus - if it's in season and fresh, you shouldn't need to snap much off. Holding the stalk gently, bending the stalk from the bottom end gently until it breaks - you can keep the hard end for making soup.

Put the asparagus in a steamer (avoid the microwave, if you can), sprinkle with coarse sea salt and cook for 10 minutes more or less, depending on the thickness of the stalks.
Refresh the asparagus to cool down, then cut into bite-size pieces. In a salad bowl, combine with the roughly chopped romano pepper, tarragon and dressing, give it a gentle toss and serve with crusty bread on the side.

I buy a couple bunches and then seperate the skinny from the chubby. I steam the skinny ones or toss them into a stir fry. and I use the chubby ones for asparagus soup! cook in chicken or veggie broth with some garlic and onion, puree it all when veggies are soft, put back in pan with 2% milk and thicken with cornstarch. season with pepper and salt.

I haven't tried roasting asparagus. Sounds yummy.

I generally break off the woody part and then steam them in the microwave, in a glass bread pan.

The skinny ones are wonderful stir-fried!

Preheat oven to 350*. Drizzle asparagus with olive oil, add salt and pepper to taste. Toss together to evenly coat. Lay out on a baking sheet (I cover it with foil first) in a single layer. Roast 10-15 minutes or to desired tenderness.

There's a great thread over in Recipe Requests with lots of Asparagus ideas. Before you cook them, rinse them well & then you will break the end off. Hold the stalk in both your hands & gently bend back, the stalk will break naturally leaving you with the best part. My husband likes to cut then ends & I feel it still leaves too much of the woody end.

I like to cut off the ends and then throw them in the oven and roast them with olive oil, salt and pepper, and parm. cheese. Yum.

you can steam them or what I do is place them in a skillet aboiut 1/2 covered in water on medium for about 15 minutes, stick a fork in the middle to test for doneness ( the fork will just slip right through) I eat them dipped in mayo

I have bought some asparagus spears for tea tonight and I have never cooked or eaten them before.

What do I do with them?
