My mom found this recipe on SparkRecipe and has made it lots of times ... she usually makes a double batch and sends one home with me when I visit her. I keep them in the freezer and just thaw one or two at a time as I want them.
She made one tiny modification .... "I don't top with the sugar and cinnamon. Instead I add Apple Pie spice to the batter. "
for some reason, to me the list of ingredients looks long and daunting ... but hoenstly they are super simple to make and the ingredients are really common and easily available.
A bit less 'natural' and healthy ... but another option is to make ANY boxed cake mix or muffin mix with diet soda instead of the milk/egg/oil etc. that the recipe calls for. I usually use diet Sprite or Sierra Mist Free in light colored mixes (yellow cake, lemon poppy seed muffins, blueberry muffins, etc.) and a diet cola (or diet Dr. Pepper) in chocolate mixes.
I know for a full cake mix you use one can of soda ... I don't remember if I reduced the amount of soda when using a muffin mix or not. Just mix up the boxed mix and the diet soda and bake in cupcake liners in your muffin pans. These do come out a bit 'sticky' sometimes so I ALWAYS use the little paper cupcake liners when making them ... but they taste GREAT and are a great way to lighten a boxed mix.

I really like muffins, but every recipe I try that has yogurt in it instead of butter or sugar and milk always ends up horribly. Does anyone have healthy muffin recipes?
