Part of the problem may be altitude (most recipes are designed for sealevel) or the actual temperature of your oven. Try cooking it for a few minutes longer and testing the rice before you completely remove the pan from the oven.

I experenced the same thing but i made the full amount. i didnt really thunk anything of it until i read ur post. huh weird. but when i reheated it the next day it was fine..

Hubby and I had the Campbell's Cheesy Chicken & Rice Casserole for dinner tonight. I cut the recipe in half since it was just for the two of us. However, the rice didn't quite cook. It calls for plain, uncooked rice (not instant), and it was a little gritty in the center. Not really crunchy, just gritty. I baked it for the recommended time: 50 minutes.

I wouldn't think being half as much food that it would need more cooking time, so I'm wondering what caused the rice to not cook? Could it be perhaps that it needed more water? The original recipe called for 1 1/3 cups, so I used 2/3 cup. Did I screw up when I cut the water quantity cleanly in half? Any ideas?
