I'm not cooking for a family and I don't think my freezer would hold 11 meals but I love the idea and do a similar thing. Every Sunday I make a meal for that night that will result in left overs for me and my boyfriend for lunch the next day, as well as another meal that will cover the next two nights. I also clean and chopped a giant bowl full of salad veggies so when I pack my lunch or come home at night I can just grab a serving, toss on some dressing and the salad is ready. I vary the type of salad each week so it doesn't get boring and you can always add different things along the way like beans, or artichoke hearts, or olives, etc. It really is a huge time saver and I have no excuse not to eat right!

This week I bought a cookbook called The Big Cook. The idea is to get together with a few friends and help each other make meals for the freezer. Being an impatient person, I just forged ahead on my own yesterday! I bought some chicken, pork and beef at Costco and between 2:45 and 8 p.m. I had made 12 meals--one for our dinner, and 11 for the freezer. For at least 2 or 3 of those hours I was busy getting kids from school and taking phone calls. The dish I made for dinner (Curried Chicken) was really simple, and got rave reviews from the whole family. There is nutrition information for each recipe, too! This will make my life soooo much easier!
