I love zucchini. One way I just started cooking them is to cut them into little discs, sautee them on the stove then add a can of diced Tomatoes with oregano, basil and garlic to it. Sautee for another 5 to 10 minutes. They are so good and flavorful. Look on foodnetwork.com for Zucchini Oreganato for the precise recipe.

The zucchini pancakes sound great! I'll definitely have to try them.

I make stuffed zucchini. I put cooked ground beef in it with a mixture of other veggies. If you wanted it healthier you could add ground turkey or chicken. You could drizzle a little olive oil over it and season or sprinkle lowfat/fat free cheese over the top and bake.

Peel and cut zucchini lengthwise, scoop and hollow out seeds down the middle. Make a mixture of feta cheese, oregano, and a little olive oil. Fill the hollow and bake in oven until zucchini is tender.

Chunk up zucchini as much as you want really, add water, a bouillon cube, cook til done, whizz up with the hand blender into soup, add a few Laughing Cow lights and whizz up again, salt, pepper to taste. Nummy, very low calorie. Works with any veggie for quick, healthy, easy soup.

This is one of my favorite recipe

1 Cup Cubed zucchini
1/4 cup chopped onion
1 Medium Tomato
1/2 Cup Green bell pepper

Sauté all the above veggies and add seasoning of your choice. i normally add pepper and garlic salt.
To this add 3-4 tbsp cooked pasta or brown rice.

My favorite zucchini dish is zucchini pancakes. Yummo! Here's a recipe similar to the one I use (mine is at home in a cookbook and I'm sitting at work!!)

Zucchini Pancakes
4 cups shredded zucchini (or a combination of shredded zucchini and shredded yellow squash)
1 tsp. kosher salt, divided
2 large eggs, lightly beaten
1/3 cup all-purpose flour
1/2 tsp. baking powder
2 cloves garlic, minced
1 tsp. dried basil
2 Tbsp. extra virgin olive oil
Place zucchini and 1/2 tsp. kosher salt in a colander. Drain for ten minutes, pressing down with paper towels to push out all the excess water. Whisk the remaining 1/2 tsp. salt and eggs together in a large mixing bowl. Add the flour, baking powder, garlic, basil and zucchini. Mix until all the ingredients are well-combined.

Place the olive oil in a large nonstick frying pan and heat over medium-high heat. When the pan is hot, drop the zucchini mixture by rounded tablespoons. Flatten gently with a fork. Cook 2 minutes or until golden brown around the edges. Flip and cook another two minutes. Remove to a plate and cover with foil to keep warm. Serve immediately.

Makes 14 to 18 zucchini pancakes.

Per pancake (based on 15): 26 calories, 1 g fat (0 g saturated fat), 28 g cholesterol, 4 g carbohydrate, 1 g fiber, 2 g protein, 2% vitamin A, 8% vitamin C, 2% calcium, 2% iron

My all-time favorite veggie dish is chopped zucchini, chopped yellow squash, lots of sliced onions, a few cloves of diced garlic, and sautee it all together in a little olive oil (sometimes I just used pam spray). For a little flavor I add parsley or cilantro if I have any. It goes great with any dinner or by itself!

I just got addicted to those ziploc steamer bags! I am a steming fool right now...LOL I cut the zucchini into little chunky sticks, and steamed them. They are so good. I didn't need butter or salt or anything! I know it's simple but it's tasty!

I love roasted Zucchini (& any other veggies!). So easy to make too. I'll buy zucchini & yellow squash & slice - store all in a gallon bag & use throughout the week.

(recipe in my recipes)
Preheat oven to 425. Spray foil lined cookie sheet with Pam Olive Oil, layer zucchini, squash & onion on sheet & spray top with more olive oil spray. salt & pepper. Bake for 15 minutes, flip once.

So good & I do this with every veggie out there!

This weekend I made grilled zucchini. Basically, you slice it into 1/4 inch thick pieces, brush lightly with olive oil, and then sprinkle on Greek Seasoning (I used a salt free Greek)

Then you grill for about 4 minutes on each side. Delicious! :)

I know this sounds really simple but it is my favorite way to eat zucchini. Whenever I have a dinner that is already high in calories but not as much food wise I go to this and love it.

Just take your zucchini and slice it into about 1 inch thickness on the diagonal.
Heat a non stick skillet and spray it with pam. Put the zucchini in the pan and spray it and salt and pepper it.
I end up turning it 2 or 3 times until it is good and brown and firm but not crunchy.
Then I top it with I can't believe it's not butter spray. And salt to taste.

You could also take a bit of Ragu chunky garden combination sauce and pour it over it.

Other than that I put zucchini in everything.
I am going to experament with making a stuffed zucchini this week I think.

This sounds like what you are looking for:

Zuchinni Bajhi

2 medium squash or zuchinni, cut into 1in chunks.
1/4 cup garbanzo flour (Bob's Red Mill makes a good one)
1/2 tsp. cumin powder
1/8 - 1/4 tsp cayenne pepper or to taste
3 Tbs. olive oil (enough to coat bottom of pan)
Salt to taste

Directions
Place cut-up squash in a medium sized bowl.
In a smaller separate bowl, mix the garbanzo flour and spices.
Pour the flour mixture onto the squash amd mix thoroughly making sure that all the squash is evenly coated. There will probbly be some leftover flour (do not discard!)
Heat the oil in pan over med to med-high heat. Once heated, dump all the squash and leftover flour into pan. Spread evenly in pan. Do not toss until a little browning occurs, then toss to cook all sides evenly. Once done, drain on paper towels and season with salt.

Number of Servings: 4

I could only find zucchini cupcakes in the recipes. I was looking for something like stuffed zucchini. I also love it grilled but its cold today and I don't want to grill. I eat it raw a lot too but am craving it grilled or stuffed or sautéed LOL

I prefer zuchini raw like potato chips but you can add it to salad. Or slice into sticks with dip. I have also cooked it with some diced onions and a can of stewed tomatoes. You can also add it to stew. Sparkrecipes has several recipes, too. Just put it into the search function.

Anyone have any healthy recipes for zucchini? I love stuffed zucchini but my recipe is way high in fat and calories.
