I've never made 1 pancake!! You'll have to read the directions and divide it down to 1, I guess.

I have a good 2 point recipe for pancakes,

Flaxmeal Pancakes or Muffins
Side Items Low Fat Breakfast

6 Minutes to Prepare and Cook


Ingredients

1 TBSP milled Flax Meal
Baking Soda, .25 tsp
*Egg white, 2 serving
Olive Oil, 1 tsp.
*Splenda No Calorie Sweetener, 1 tsp

Directions
Cook like any other pancake, keeping in mind that Flaxmeal won't "bubble".
For " Muffin in a Minute", pour batter in cup & microwave for 1 - 2 minutes.
