Yes ... any canned diced Tomatoes would work ... but they won't have the chile pepper flavor of Rotel ... so you'll want to add some canned or fresh roasted chiles or other peppers ... or see if you can find diced Tomatoes with mild chiles. I know Hunts makes them too, not sure about DelMonte or Muir Glenn.

Another possible substitution for the Rotel would be an equivalent amount of jarred tomatoe based Salsa (like for dipping chips).

Also, when looking for Rotel ... the can is a bit smaller than standard canned vegetables - 10 oz. instead of 14 or 15. And in most of our stores it tends to be on the top shelf.

I personally can't stand the taste of cilantro. So I have been watching cooking shows and they say you can use parsely instead.

If you couldn't find Rotels couldn't you use a can of stewed tomatoes?
I don't think I have ever seen Rotels in our store.

you can get cilantro fresh or dried, also it has a funny taste raw. If you taste it in the store, remember that you are cooking it and it is not going to taste the same.

Cilantro is also known as coriander - the leaves not the seeds.

Cilantro is a fresh herb similar to parsley.
Rotel is canned Tomatoes with diced chilis found near the canned Tomatoes or near the "mexican" section.

love the recipes and the comments to substutute ingredients if you dislike or alergic too.I would like to know what cilantro and Rotel is and what substitute i can use.Love enchiladas dying to try Shelley's recipe.
