There's lots of slow cooker vegetarian recipes and books available. Start everything in the morning and dinner's ready when you get home.

One of my favorite recipes is lentil stew. 1 cup of dried lentils, two large peeled and cubed potatoes, 3 peeled and sliced carrots, 2 cups vegetable broth, and a cup of water. Cook on low for at least 7 hours.

sorry I didn't pay attention to the fact that you wanted to keep it veg. What about a wrap with hummus and veggies/avacado. Thats good quick and easy.

One dinner that I can whip up quick style is Trader Joes frozen microwavable brown rice, with frozen green beans and trader joes already cooked chicken and turkey basil sausage. I add a little bit of spaghetti sauce to the brown rice and mix in the green beans and sausage and voila a pretty decent meal in about 5 min:)

I am a brand new member. During the week when I get home, I am not interested in dirtying a bunch of pots, either am I interested in frozen dinners. eating out is expensive and dangerous. I am sick of soup.
I want to go veg- not necessarily vegan. Anyone have some easy No cook ideas? What can I keep in my fridge and just grab?
