It only happens with meats cooked at a high temperature (regardless of whether it's on a grill, in an oven, or whatever). Here's an article from the National Cancer Institute about what exactly it is and how to reduce risk: www.cancer.gov/cancertopics/factsheet/Risk/heterocyclic-amines

It's not burnt, it's well done, now eat it !
Or so that's what my mom used to tell us all the time.
LOL

Okay, this reply is a little late, sorry. I read the same thing, but my understanding is this refers to foods cooked on a grill. It has something to do with the chemicals released from the charcoal. I love burnt cheese!

I hope that's not true because I also like my food a bit well done. Ok, burned. My kids tease me that the only reason I like my food burned is because thats the only way I know how to cook it.

So I may be strange, but I really like to burn my food a little bit - I like the char flavor. I heard somewhere this is really bad for you because the burnt part is a carcinogen. Anyone else heard this? Does it take away any of the nutritional value?
