I love salsa on my salad. It is so low in calories. I also like to eat it on a baked potato. Throw you salsa in a crock pot with chicken and black beans for dinner. Top it with cheese. It's so good.

i have found that since I love salsa, it goes great on a salad rather than those high calorie dressings. :)

My sister's husband is from Mexico and he makes the best Pico Sauce. Here is his recipe, makes a lot.

1.5 oz fresh jalapenos
1 lb. fresh tomato wedges
1 oz cilantro sprigs (blend in a blender)
1 1/2 tsp. comino (cumin)
2 tsp. granulated sugar
1 cup water

Mix all together.

I DONīT KNOW HOW EXACTLY TO TRANSLATE THIS IN ENGLISH, BUT HERE IT GOES.
WE ARGENTINIANS USE TO MIX MEAT FINELY CHOPPED, OR,...A HAMBURGER WITHOUT BEING COOKED, WE INSTEAD OF COOKING IT AS A HAMBURGER, WE ROLL IT TO MAKE A LITTLE BALL, AND COOK IT, WHEN ITīS READY WE DIP IT INTO SALSAS.

Its not a party food idea but I love to put a tablespoon of salsa with an egg in a muffin tin and bake it for breakfast, yum!

I use salsa as salad dressing for a "mexican salad" - chopped romaine lettuce, black beans, corn, shredded chicken. sometimes I spray a bit of oil on a corn tortilla and bake it and use that as a base so it's like a tostada. I too eat salsa on baked potatoes. You can bake chicken in it or put it on chicken or fish. I haven't had it on steak but come to think of it, it would probably be good.

as far as dipping - carrrot, celery, cucumber sticks, toasted pita bread, whole grain crackers.

You can use celery to dip in the salsa - - or - - you can use mozzeralla cheese sticks. I do a low carb foodplan so those are great choices for that. I think salsa is great on alot of things - -I use it sometimes on a baked potatoe with sour cream - (on days I have potatoes - they are one of my carb weaknesses!).

This is a recipe for a very different type of salsa but it is amazing!! Make it a day before for the flavors to really gel!!

1/2 c red onion, diced
1 jalapeno, seeded and minced
1 ts garlic, chopped
1/4 ts ground coriander
1/4 ts ground cumin
1 ts salt
1/4 ts black pepper
1 tb red wine vinegar
2 tablespoons olive oil
1/2 pineapple, diced
1/2 c red bell pepper, diced
2 tb cilantro, chopped
1 can black beans (rinsed and drained)
1 can corn (rinsed and drained)

Combine all ingredients EXCEPT pineapple. Combine and set aside while chopping fruit. Add fruit to mixture and mix well.

I mix it up a bit regarding quantity. I usually put a lot more pineapple than the recipe calls for and add a bit more spices. I don't like cilantro so I leave it out. This. .. with homemade baked corn tortilla chips. . what a great healthy snack.

Here's my salsa recipe:
3 cans mild, original or hot rotel (depending on your taste)
1 can Tomatoes for chili
1 jalapeno
juice of 1 lemon
5 green onions
2 cloves of garlic
1 tablespoon chopped cilantro
salt and pepper to taste

1. Take the seeds out of the jalapeno and place into a food processor. Add 2 peeled garlic cloves and roughly chopped green onions. Turn on the food processor until chopped fine. Put this mixture into a bowl.

2. Drain all Tomatoes and put into food processor until the consistency you want. Add this mixture to the chopped vegetables.

3. Add the lemon juice, cilantro and S&P and mix all ingredients together.

Making your own salsa is very easy and taste a whole lot better than things you'll buy in a jar. Plus you know exactly what's going into the salsa.

I do something similar to Mysharonany, but I use whole wheat tortillas.

I often add leftover salsa into my chili. Also, I love salsa on baked potatoes.

Make your own tortilla chips. I do most every day.

Get a bag of corn tortillas and cut them into triangles. Spray PAM on a cookie sheet and place the cut tortillas on the pan. Either spray with a little more PAM or use an oil mister. Sprinkle with your favorite seasonings. I use garlic, herbs de provence, rosemary, cumin, pepper, etc. . .. and then bake in the oven at 300 until done. 15 - 20 minutes or so. You need to watch your oven and don't over bake. Let them cool before you store in a tupperware.

They are very crunchy and very TASTY!! One oz. is less than 70 calories and depending on the type of tortillas you use, that is upwards of 15 chips. Enjoy.

Sometimes I use eggbeaters and salsa and make an omelet. YUM. I tastes like a spanish omelet.

Wholegrain (or whole wheat) flat breads are great for this, I just cut them into small triangles and pop them in the oven for a few minutes until they're crisp - great with salsa.

Also vegetable sticks such as carrots, celery etc are great to dip.

I love salsa, and with the big game tonight we have a ton of it in the house. Does anyone have any tips for what to dip in the salsa besides tortilla chips? It's a pity because salsa is relatively healthy (bit high in sodium, but low cal and low fat), and I don't want to mess it up with those salty, high calorie chips!
