Hi

If I'm reading the "comparison of dietary fats" in various oils at the following site, then Safflower oil beats out olive oil in healthy fats.

Both are supposed to be heart healthy. But I have heard that olive oil should not be used when cooking at high temps. I know olive oil has a better taste for salads or adding to pasta. Hope this helps.

I read in a diet book that Olive oil, expecial the dark green one is much better for your health, and lessing the chance of getting a clog artery.

Can anyone tell me why olive oil is supposed to be a better, healthier oil to cook with, but when I compared the new olive oil that I just bought to the Canola oil I already had their nutritional content was the same, i.e. - 120 calories, 0 sodium, etc...
