I love homemade bean soups.
My crock pot recipe: 2-4 ham hocks, depending on size 1 pound package northern beans (or any other kinds), picked through and rinsed 2 boxes chicken broth carrots, onions, celery diced fine 2 bay leaves
Add all ingredients to the crock pot and cook on low all day. Take out bay leaves before serving as the are not edible. You won't need to add any water or broth if you cook on low and leave the lid on. It makes a thick creamy sauce that is delicious.

| I usually cook them in a stock pot for about 1 1/2 hrs in plenty of water with salt to taste, and cover. If you see the water is running low add more just make sure it is hot. Cold water makes the beans and broth turn a darker color. Sense your using them for chili it really doesn't matter, I usually serve the cooked beans and broth in a bowl and dark broth doesn't look very appetizing.. LOL!

Homemade beans are great. You can do so much with them. You can add whatever spices you want to them and eat them plain or in a tortilla. Make your own refried beans without all the fat.
If you want to soak them first: You can soak them overnight or do a quick soak.
Quick soak: put beans in pot add water, cover the beans about 3 inches with water. Bring to a boil, cover and cook for about 3 minutes. Turn off heat and let sit for an hour.
To cook: You can cook in a pot or in a crockpot. The pot is quicker but the beans end up a little more mushy. In the crockpot, the beans tend to stay whole.
Another method: (this is the one I use the most) Take your dried beans, put into a pot cover with about 3" water and just start cooking. They take about an hour to 1 1/2 hours. Just make sure there is always enough water. I have not had a problem with them at all. I learned this one from my brother in law.

| I did look at the slow cooker option but mine are too large for the quantity of beans that I have.

I cook them in the slow cooker. Cover with water about 1 1/2" stir add water as needed. Cindy

Cool. Their on soaking now and I will leave them overnight and cook the dishes tomorrow.

You can either boil them for an hour then let them soak in the the same water or you you can soak overnight. Just make sur you rinse them befor you put them in the meal

You should soak them first. There's a quick way, which I can't remember, or you can soak them overnight. I've tried the changing water thing and don't think it makes that much difference.
You will need to cook the chili longer if you don't precook the beans.

I've never cooked with beans before, except for green beans but I decided I wanted to make a chilli. I opted for dried rather than canned beans but I'm confused as to how to cook them.
Do I soak them first, then cook them before adding to the chilli, or just soak them?
From what I've read, changing the water during soaking reduces the gassy effects, is this true?
Any tips on cooking them would be fantastic. I have a mixture of Haricot, Great Northern, Small red and Adzuki beans to cook and add to the chilli.
