Talk about super easy! Toss the chicken breasts into a baking pan--I did not even season mine because they were still partially frozen. Cover with foil and bake for 35 mins at 350 degrees, or until done.
While the chicken is baking prepare your salsa. Chop up your mango, cucumbers, onions, cilantro and japeleno. Toss in a bowl together, add salt and lime juice and refrigerate.
When the chicken is done plate it and put a quarter of the salsa on each breast.
