I have a few things that I love without meat. My new favorite- Choose a favorite pasta and boil until it is done to your liking, approx 15 min. While it is cooking preheat oven to 400 while preparing next ingredients. Spray a metal baking dish with Pam and in it place 1 pint of grape tomatoes, 1 onion sliced and 2 cloves of garlic grated fine, salt and pepper and spray with pam one more time. Place in a 400 degree oven and bake until pasta is done. Drain pasta, Take veggies out and squish with a potato masher. Mix with pasta and rip a few basil leaves into it. Mix and eat. Super simple and tastes amazing.
I love to take zucchini and slice it and spray a non stick pan with Pam or butter flavor spray. Sauté on both sides until done. About 5 min on each side if you cut thick. salt and pepper to taste. I use I can't believe it's not butter spray too.
I used to love to have breaded and fried zucchini and now this is the only way I would want it.
I have also made tacos or enchiladas with carrot, celery, onion and zucchini chopped and just use a taco seasoning packet. It works great.
I made a Bok choy soup the other day that was amazing. Grate 1 inch of fresh ginger and 2 garlic cloves into a 4 quart pan with 1 tsp oil and lightly brown. Add 3 mushrooms diced fine and 1 onion sliced thin and continue to fry and let the onions sweat. Cut up a head of Bok Choy and add to the pot. After the Bok Choy has started to wilt add 1quart of chicken broth. Let it bowl. Your done. Sometimes I add a bit more chicken soup base. And salt and pepper You can add noodles to the pot and cook until the noodles are done.

In the winter our family loves all sorts of bean soups -- easy and economical too. For example this week I made a cuban black bean soup and a spicy lentil soup. Also these type of soups freeze well for a quick low cal lunch. We eat several vegetarian meals a week and have lowered our cholesterol and don't miss the meat since we have a large variety of great recipes. Half the fun is trying new recipes and seeing what works for your family.

Vegetable fried rice.
Simple, yet delicious!
Just take some already cooked rice, add it to a skillet and then throw in any of your favorite vegetables.
I like mine plain like that with just a little salt, but I suppose you could use soy sauce or any other flavorings and spices you can think of.

Quorn is really the best next thing to meat! I love it! I use it almost everyday. I make Indian and Thai curries with it! I stir fry it for Chinese and Japanese dishes. They even have a veggie chicken with cheese - similar to a cordon bleu. Delicious! I treat myself to that sometimes although it's hard to find. Sky's the limit when it comes to Quorn! Yum! My children prefer eating it to real chicken! Another favorite is the B-B-Q ribs (veggie)! I was thinking of using the rib meat for my veggie pork fry rice next time.

Me, I've never been one for red meat at all- personal preference, I think. But, there are lots of ways to get protein, from chicken/fish, eggs, milk, nuts/legumes- all in moderation of course! And, I've never had any problems when I go out, to ask for slight alterations on dishes, like burgers made with a veggie/Boca burger, or chicken breast instead of fish. And, most places are so health aware that they happily abide. And, there is so much variety, too, with all the different cuisines- and you can improvise to make most dishes a lot healthier. I love making chili rellenos (w/ low fat/low Na cheese- as fat free is too rubbery) and frothed egg whites. Home made curry dishes w/ chickpeas (as mentioned by a prior Sparksperson), can be a healthy, delish dish. And when I go out, I often take a look at the breakfast menu (if available and served), at these- as most are not too heavy in the beef department.
Hope some of these ideas help. There's so many recipe sites and ideas out there- I could spend days just looking!

I'm a pescatarian (eggs, fish, milk products) I recently discovered a meat substitute called "Quorn" http://www.quorn.us It's really really good. I made some chick'n (quorn) white bean and salsa chilli - it was great! Low cal & low fat!

Pasta and Veggies
* 1 pound your favorite pasta shape * 2 tablespoons olive oil * 1/2 pound asparagus, trimmed and cut into 1 inch pieces * 1 cup fresh broccoli florets * 1 cup chopped red bell pepper * 1 cup chopped zucchini * 3/4 cup butter * 2 tablespoons minced garlic * 2 cups sun-dried tomatoes, packed in oil * 8 ounces grated Parmesan cheese
DIRECTIONS
1. Preheat oven to 375 degrees F 2. Bring a large pot of water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Toss with olive oil. 3. In a large skillet over medium-high heat, roast asparagus, broccoli, bell pepper and zucchini until flecked with dark brown. Set aside. 4. In a large skillet over medium heat, melt butter. Saute garlic and sun-dried Tomatoes until heated through. Toss with pasta, roasted vegetables and Parmesan. Place in a 9x13 inch baking dish. 5. Bake in preheated oven 30 to 40 minutes, until hot.

Just look outside american cuisine. Most good indian dishes can be done with chickpeas or lentils and some veggies with lots of curry powder and a side of rice. Just the same with stir fry, lots of veggies and some tofu (the firm holds up best). What about some bean or cheese quesadilla/burritto/enchilada. A nice couscous salad with chickpeas or nuts. Even a nive pot of veggie stew and a side of bread.

I'm not Strictly Veggie, but I've had so much meat in the last couple of weeks I'm about ready to vomit. I'm completely and utterly sick of meat and I'm looking for some good Meatless meals.
I've never had Tofu, but I might be willing to try it.. Eventually. lol I just need some recipes that don't include meat. the whole family is sick of hamburger and chicken. lol
