We use LOTS of eggwhites from the egg section of the grocery store. Hardly ever use real eggs in the shell when eggwhites will do as a substitute.

Desolate, I did a little math for you. 8 eggs with a cup of shredded cheese and a cup of diced ham--(which is my son's breakfast of choice) is 1297 calories and 92 grams of fat.
If you worked down to an omlette with 2 whole eggs and 3 whites, a half cup of shredded cheese, add some veggies, top the cooked omlette with reduced fat sour cream and salsa, AND had 2 slices of a good 9 or 12 grain bread with low sugar strawberry preserves you would have 777 calories and only 39 grams of fat!
Omlettes our my families favorite ways to eat left overs, chicken breast, chili, pork chops, even cooked left over veggies can all go in there. We choose not to use low fat cheese because we dont like it at all, so we just cut back on the amount we use.

Here is what I would suggest; since you are used to an 8 egg omlette you are not going to be happy with a 2 egg beater scramble or something like that, not right off anyway. Make your changes in baby steps, that is the only way to stick to it.
I would start with a 5 egg omlette, and some fruit to fill in the gap. Then next time use 3 white and 2 whole eggs. Also maybe change it up a little, how about one with peppers, salsa, cheese and a little fat free sour cream ontop? What you take away you should substitute with something healthy, edge in some more veggies, maybe less cheese, a good whole grain toast with low sugar jelly.....Or how about half of an omlette and a small portion of oat meal? Stay away from the prepackaged ones with globs of sugar.
Baby steps will get you there, huge leaps will set you up for failure!
Secondly, making friends here will help you keep accountable. Isolation is not good for you. I read your sparkpage and my heart goes out to you! Keep your chin up, you can beat this!

My favorite is the All Whites egg product. Cook up some onion (mushrooms, green pepper, if you like) with a little deli ham, add a ¼ cup of the egg whites, mix in with a sprinkle of low fat yellow cheese (it cheats the eyes to make you think it’s an egg yolk) serve it up in a warm low carb tortilla and you have yourself a healthy “Breakfast Burrito” for about 170 calories and a good balance of protein, carbs, fiber, fat, and Full of flavor!

I really put eggbeaters to the test this week. I made a breakfast casserole with them and "hammy cheesey eggs" for my husband whose whole family is crazy for eggs. he didn't even notice. Now granted they were mixed with stuff, but after I explained what I had done, he still said he liked them. Of course I can't make him "dippy egg" his family's name for fried eggs,but considering all the mornings he wants an egg sandwhich for breakfast, scarmbled works just fine.
A real egg, just one, has 4.5 grams of fat and 215mg of cholestrol. If you have a typical breakfast with 2-3 eggs, think of all bad stuff you would be avoiding by substituting with Eggbeaters!

They cook different because the yolk is removed so be warned. No they won't give you the Eggy taste if that is what you want but it will give you an Egg taste.
Powdered eggs have the same fat and cholesterol in em regular do. They just powdered them.
I did find a scrambled tofu recipe one time that tasted just like the real thing. The bad thing is I can't find that recipe again. I would LOVE to . If I do I will let you know.

Egg beaters are good, and have 30 calories per 1/4 cup (the equivalent of one egg).
Another option is to make your omelet using just one egg and making up the difference with egg whites. Egg whites only have 17 calories each, so by using just one whole egg plus the whites, you can save a bunch of calories.

I am an egg FIEND. I can make an 8 egg omelette filled with ham and cheese, and eat it without batting an eyelid. That one meal must be near 1,000 calories. I know....TERRIBLE. What out there can I eat that's not whole egg, but that tastes like eggs when it's cooked up and eaten? For example, do powdered eggs carry the same amount of fat, calories and cholesterol per serving as regular eggs? Also, how about egg whites? I don't mind eating substitutes for foods, as long as they taste remotely similar to the original food. I'm a single guy that eats like one, so I don't have a "fine" taste palette. I'd like to know if there is a food out there that I can buy that tastes like eggs, but without the same calories per serving. If powdered eggs can do that, then please let me know. I wouldn't want to waste my money on them if they're gonna give me the same amount of calories per serving as regular eggs. That would defeat the purpose.
