hi, I just used a box cake mix and added a whole can of pumpkin. (I actually got the recipe off of another post a few months back). The batter seemed a bit too dry so I added a small container of applesauce (I use the prepackaged containers that come 6 in a pack of unsweetened). I made them into cupcakes and brought them to my in-laws for a summer picnic and it was a big hit. They had no idea they were eating low cal and low fat cake.
About the flaxseed I dont think I have ever had it. Does it have a taste and what exactly does it do??
I have not used the weight watcher recipes but I would like to some day.
I have tried a bunch from sparkpeople. I tend to improvise sometimes because I am so darn picky. One that was real easy was salsa chicken. You just place a piece of chicken breast on foil and place your favorite salsa on top and roll foil around and stick it in the oven. The chicken is so moist and seasoned. Serve over rice.

Thanks for the suggestion about cooking light magazine. I will look at it next time I go to the store.
In making the chocolate cake or cupcakes, you use regular cake mix and sub. the oil and eggs with canned pumpkin and applesauce. How much do you know to put in?
I have a good recipe for flaxseed Muffins. There very moist and you can add alot of different things to them.
Have you used any of the weight watchers recipes?
I like to get recipes from allrecipes.com. I'll have to look at the light cooking ones.
Have you tried any from sparkpeople?

I really love the Cooking Light magazine. A co-worker actually sent me a subscription about a year ago and I have been hooked ever since. There are so many great ideas. And they have some good suggestions how to help with portions. In reality if a recipe is made with better ingredients then you cant actually have the same amount as before but shaving a few calories or fat grams. Thats what I think when I am indulging in a cake or something that is regularly bad. I also have another idea for your sweet tooth. For a very low fat chocolate cake use a can of pumpkin and applesauce (I buy the little packs of applesauce and they measure out perfectly) in place of the oil and eggs. It is so good and you cannot tell the difference. A lot of people do not like pumpkin but honestly you cannot even taste it but still receive the benefits from it!! Serve with a light frosting or even better as a cupcake without frosting.

Here it is! Carrot Cake with Toasted Coconut Cream Cheese Frosting
Cake: 3/4 c flour 1/4 c quick-cooking oats 1 1/2 t baking powder 1/2 t baking soda 1/4 t salt 1 c sugar 1/4 canola oil (I used applesause instead) 1 jar of carrot baby food (didnt have so I pureed carrots in the food processor) 2 large eggs, lightly beaten 1 1/4 c finely grated carrot 1/2 c golden raisins ( I would not add these next time) cooking spray
Frosting 1/3 c cream cheese, softened 1 T butter, softened 1 1/4 c powdered sugar, sifted 1/2 t vanilla extract 1/4 c flaked sweetened coconut, toasted
1. Preheat oven to 350
2. To prepare cake, lightly spoon flour into dry measuring cups level with a knife. Combine flour and next 5 ingredients (thru salt)in a food processor; pulse 6 times or until well blended. Place flour mixture in a large bowl. Combine sugar, oil, babyfood, and eggs; stir with whisk. Add to flour mixture; stir just until moist. Stir in grated carrots and raisins. Spoon batter into an 8-inch square baking pan coated with cooking spray.
3. Bake at 325 for 40 min.s
4. To prepare frosting, combine cheese and butter in a large bowl. Beat with a mixer at high speed until creamy. Gradually add powdered sugar and vanilla, beating at low speed until smooth. Spread over cake and sprinkle with coconut. Cover and chill.
I thought it was so good and it was easy. It took some time but I had some time to kill. Hope you enjoy. I also thought it was easy to make substitutions to add more of a health factor.

Yes, I would love the recipe for Yummy Carrot Cake. I am just starting my new Sparkpeople program, and I have a really strong sweet tooth. I can use all the help I can get. Now for portion control.

| If anyone likes Carrot cake I have found a delicious recipe from the Cooking Light magazine. It is low fat and so easy to make. It calls for baby food carrots to make it moist, but I didn't have that so I made my own in the food processor. I also added applesause instead of oil. I would love to pass the recipe on if anyone is interested.
