Guys - I'm sorry I didn't log back into this forum to see that you wanted the recipe and unfortunately I'm not receiving my emails for sp.....which is annoying!

Anway - please keep in mind these measurements are estimations - I rarely measure - just usually goes with what looks and feels good. Plus I cook for 6 people. So, you may have to cut the recipe down some. OK - well here goes - this is what you will need for the complete meal.

5 lbs of pork loin chops OR chicken breast (boneless skinless)

1 can of asparagus, or 1 bag frozen or 1 bunch fresh (if using fresh - braze them OR tenderize them before adding to the dish to bake)

1 lb package of fresh carrots or frozen - up to you

1 package of angel hair pasta

pesto to taste OR can use I Can't Believe it's not butter spray, mixed w/ parsley and garlic (up to you)

Parmeasan for the pasta

1 - 4 tsp of minced garlic (depends on how much you like garlic)

2 - 4 TBLSPN of Apricot jam or preserves

1/4 cup white wine (cooking wine OR regular whatever you have on hand) Can also subsitute w/ orange juice

1/4 cup extra virgin olive oil

2 tspn each of basil and oregeno (use your best judgement)

chicken stock for carrots (can also use OJ or pineapple juice - up to you)

1 13 x 9 baking pan

Preheat oven to 350 degress

start the water for the pasta and stock for the carrots (can add carrots before boiling point)

trim fat from meat

in seperate bowl mix wine, olive oil, garlic, and jam together.

place meat and asparagus in 13 x 9 pan....meat the veggie - pout wine mixture over meat and veggie.

Sprinkle remaining spices to your taste over top....remember a little goes a long way....it all depends on your taste.

place pan in oven for about 20 minutes or until meat is throughly cooked

meanwhile the water for the pasta should be ready. oook pasta completely.

Once finished combine pasta and pesto sauce in a large bowl - if you don't have pesto sauce - I've used a mixture of I can't believe it's not butter spray (no calories) parsley and garlic w/ parmesean cheese - it s a great hit w/ litle calories

once the meat is finsihed place a bed of pasta on the plate w/ meat on top - serve carotts on the side

THIS IS AN AWESOME DINNER. You would think it took longer than 30 minutes to make, but it really didn't! It give you the feel of a gourmet meal w/ out all the fuss. Serve w/ an extra side salad as an entry dish and wala u have one tasty dinner.

If you don't have pesto in the house or would like a detaled recipe - I got mine from www.recipezaar.com....you can also buy pesto premade, but it's just not as good as homemade (my opinion of course)

All the stir-fry recipes are great! I make a bunch of the chicken casseroles using portobello mushrooms instead of chicken and love them.

Hi, I am going to make chicken soup tonight, with chicken,tomatoes,onion,garlic,potatoes,cilantro,cabbage calabasa and carrots and seasoning for taste.

That recipe sounds AMAZING! My boyfriend comes to visit every weekend and we're always looking for new recipes to cook at home instead of going out to eat. If you don't mind posting the recipe or emailing it to me, that would be fantastic!

Hi guys - actually - I made an AWESOME dinner last night- still conteplating our dinner plans for tonight. Anywho - I made pork tenderloin chops covered with a sugar free apricot jam, garlic, olive oil, white wine, and asparegus. Served on a bed of angel hair pasta covered with pesto sauce....AND a side of carrots. If anyone is interested in the recipe please let me know.

I made the vegetable fried rice, and it's so good! It has lots of veggies in it and it's made with whole grain brown rice! I boiled some chicken breasts and served it with the rice. so tasty!!

i've made "Dad's Chicken Pot Pie" two weeks in a row, I liked it soooo much. Plus I have a cold and it's great comfort food! To find it look in Spark recipes under Chicken Pot Pie.
