Delicious "Indian" Chicken Recipe

Shish Tawook Marinated Chicken. It is a recipe I found on line and it was AMAZING!! A real keeper. Not sure if it was on Cooking Light. . .Cooking.com. . . but it sure was worth making.

This is the recipe for 2 servings:

INGREDIENTS

* 1 tablespoon vegetable oil
* 2 teaspoons plain low-fat yogurt
* 2 teaspoons ketchup
* 2 teaspoons prepared mustard
* 1/2 teaspoon garlic powder
* 3/4 teaspoon paprika
* 1/2 teaspoon ground allspice
* 1/8 teaspoon black pepper
* 1/8 teaspoon ground cinnamon
* 1/8 teaspoon curry powder (optional)
* 1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
*
* Dipping Sauce:
* 2 tablespoons and 2 teaspoons mayonnaise
* 1/3 cup plain low-fat yogurt
* 1 clove garlic, minced
* 1/8 teaspoon salt

DIRECTIONS

1. In a medium bowl, stir together oil, yogurt, ketchup, and mustard. Season with garlic powder, paprika, allspice, black pepper, cinnamon, and curry powder. Stir in chicken pieces, coating all sides with marinade. Cover bowl, and refrigerate overnight.
2. To make dipping sauce, mix together mayonnaise, yogurt, garlic, and salt Cover, and refrigerate.
3. Preheat oven to 400 degrees F (200 degrees C).
4. Transfer chicken pieces to a shallow baking dish. Bake in a preheated oven 30 minutes.

I tweaked it a bit. . made extra sauce, served over rice with roasted cauliflower, added extra garlic, no allspice. My husband says the dip would be great with pita as a party appetizer.

I HIGHLY RECOMMEND IT!!
