travel tip--if gotta keep cake cold

a lady who works in the grocery store bakery gave me this tip, and it worked wonders for keeping my 2 layer holiday poke cake perfect.

if you're driving to somebody's house for a holiday dinner and want to take a cake or something similar along, but don't have an ice chest to spare, make sure to have a small or medium roasting pan (whichever size will work best with the size serving plate you have to work with). fill it about 1/3 to 1/2 full of water and freeze, 12 hours at the very least or til completely frozen.

When you are ready to leave, take the frozen water pan out of the freezer, and set the cake and its plate on top of/above it. cover cake with a large sheet of aluminum foil (large enough to cover but minimize the aluminum sticking to the top of the cake or cold item). crimp the foil down around the edges of the roasting pan to keep it in place and keep the cake good and cold. place a good sized towel underneath the pan to prevent a wetspot on the seat (if your car is susceptible), or if its gotta be in a lap, it won't freeze the person's lap. might also help with insulation if you keep the pan on the towel while it sits out on the counter.

this is a good way to keep this cold for several hours, especially if there is no way to keep the cake or item in the refrigerator. just make sure the cake stays somewhat covered as much as possible to prevent melting. (I tried this, and i had that double layer holiday poke cake out between 9:30 am and 6 pm, and there wasn't a hint of melting jello or whipped cream or cake).
