Chicken Parmesan, this one is yummy!!!
spread some fat free sour cream on boneless, skinless breasts and roll in a mixture of seasoned whole wheat breadcrumbs and parmesan cheese. Bake 20 mins (let sit for 5 mins)then sliceon the diagonal and serve atop Barilla Plus angelhair pasta and marinara sauce of your choice.

I just got a great recipe from work yesterday. Tried it out tonight and it was great!

1 lb of chicken breast
1/4 C. Kraft Light Done Right Zesty Italian
1/4 C. Parm. Cheese

Put the chicken in a zip-lock bag w/the dressing and cheese. Lay flat in the fridge and marinate for 1/2 hr. Bake at 425 for 20 minutes. I broiled mine for a few minutes on each side to get a little crispy. Very easy and very tasty!!

AWESOME RECIPE!! :)I was skeptical about the cereal and all that, but this was easy and soooo good! My super picky 7 year old daughter even loved it!

Try a new twist on baked chicken breasts! Dijon mustard, Parmesan cheese, basil, garlic and high-fiber cereal create the tasty wow.

3/4 cup fiber OneŽ original bran cereal
2 tablespoons grated Parmesan cheese
1 teaspoon dried basil leaves
1/4 teaspoon garlic salt
1/4 teaspoon coarse ground black pepper
1 egg white, beaten
2 tablespoons Dijon mustard
4 boneless skinless chicken breasts (about 1 1/4 lb)
1 tablespoon canola or vegetable oil


1. Heat oven to 400°F. Spray 15x10x1-inch pan with cooking spray. Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
2. In shallow bowl, mix cereal, cheese, basil, garlic salt and pepper. In another shallow bowl, mix egg white and mustard until blended.
3. Dip chicken into egg white mixture, then coat well with cereal mixture; place in pan. Drizzle oil over chicken.
4. Bake 20 to 25 minutes or until juice of chicken is clear when center of thickest part is cut (170°F).

Chinese Lettuce Wraps


1 serving Pam vegetable cooking spray
6 oz cooked chicken, cubed, chopped (chicken breasts)
4 oz canned water chestnuts, chopped
1 stalk celery, chopped
2 scallions, chopped (green part too)
===Szechuan Chicken Sauce===
1/4 cup low-sodium defatted chicken broth
1 Tbs hoisin sauce
1 tsp chili sauce, hot Chinese Siracha Huy Fong Foods
1 1/2 tsp cornstarch (omit to make this dish CORE)
1 Tbs rice vinegar
1 Tbs Splenda
Boston lettuce leaves for wrapping chicken mixture and sauce



1 Spray a nonstick skillet with Pam. Mix chicken, water chestnuts, celery and green onions together. Heat.
2 Make Szechuan Chicken sauce. Mix everything together in pan.
3 Wrap in lettuce wraps.

Shish Tawook Marinated Chicken. It was a recipe I found on line and is was AMAZING!! A real keeper. Not sure if it was on Cooking Light. . .Cooking.com. . . but it sure was worth making.

This is the recipe for 2 servings:

INGREDIENTS

* 1 tablespoon vegetable oil
* 2 teaspoons plain low-fat yogurt
* 2 teaspoons ketchup
* 2 teaspoons prepared mustard
* 1/2 teaspoon garlic powder
* 3/4 teaspoon paprika
* 1/2 teaspoon ground allspice
* 1/8 teaspoon black pepper
* 1/8 teaspoon ground cinnamon
* 1/8 teaspoon curry powder (optional)
* 1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
*
* Dipping Sauce:
* 2 tablespoons and 2 teaspoons mayonnaise
* 1/3 cup plain low-fat yogurt
* 1 clove garlic, minced
* 1/8 teaspoon salt

DIRECTIONS

1. In a medium bowl, stir together oil, yogurt, ketchup, and mustard. Season with garlic powder, paprika, allspice, black pepper, cinnamon, and curry powder. Stir in chicken pieces, coating all sides with marinade. Cover bowl, and refrigerate overnight.
2. To make dipping sauce, mix together mayonnaise, yogurt, garlic, and salt Cover, and refrigerate.
3. Preheat oven to 400 degrees F (200 degrees C).
4. Transfer chicken pieces to a shallow baking dish. Bake in a preheated oven 30 minutes.


I tweaked it a bit. . made extra sauce, served over rice with roasted cauliflower, added extra garlic, no allspice. My husband says the dip would be great with pita as a party appetizer.

I HIGHLY RECOMMEND IT!!

Sour Cream Baked Chicken - so easy and you can modify for 1 - to many!

FF Sour Cream (roughly 1/4 cup for 1 breast)
Seasoned Bread Crumbs (roughly 1/4 cup for 1 breast)
Chicken Breast

Put sour cream in a zip top baggy. Place bread crumbs in a shallow bowl or plate. Put chicken breast in baggy with sour cream, seal and squish around until fully coated. Pull out chicken breast and place on bread crumbs, shake plate to cover breast, flip and do the same. Place chicken breast in oven safe baking dish sprayed with nonstick oil - bake at 350 for about 30-35 mins (longer if you are making more breasts.) Serve with steamed veggies and brown rice.

We also like to grill boneless chicken on the George Forman and slice it and put on BIG salads of mixed greens, cherry tomatoes, sliced pear, low-fat feta cheese, onion, drained & rinsed chick peas, etc. (add in as many veggies as possible)

Grilled Teriyaki Chicken:
First, butterfly-cut 4 boneless skinless chicken breasts and lay open. Inside, place a ring of green bell pepper, a ring of red bell pepper, a ring of purple onion and a ring of pineapple. Pour several tablespoons of sweet Teriyaki Sauce into the open chicken breast and then close shut with wooden toothpicks. Make tin-foil pouches for each chicken breast and then add more Teriyaki Sauce to the pouch (to coat the outside of the breast). Close the pouch and slit a small hole to 'vent'. Place on the grill for several minutes, turing once--until cooked to approptiate temp. salt and pepper to taste. Really great to serve with brown organic long-grain rice and steamed fresh snap-beans. It is DELICIOUS AND TENDER!

Baked BBQ Chicken Tenders:
Take skinless chicken tenders and carefully remove any excess fat from edges, rinse with water. In a separate bowl mix a few tablespoons of vinegar (amount according to taste) with Hickory Smoke Flavored BBQ sauce; also stir in a small pinch of crushed red pepper flakes and salt and pepper to taste. Lay chicken tenders in the bottom of a glass casserole dush (sides not touching) and brush with BBQ/vinegar mixture; flip over and repeat. Place in preheated oven at 425 (turning once during cooking and brushing with BBQ/vinegar mixture). Cook until chicken tenders reach appropriate temp. This is quick, easy, and great to prepare for parties in large quantities!!

Italian Chicken:
SOOO EASY!! Pour one bottle of Zesty Italian Dressing over Boneless Skinless Chicken Breasts (placed in a glass casserole dish). Sprinkle with salt & pepper to taste and parsley flakes. Place in preheated oven at 425 until cooked to appropriate temp. **You can also grill these by placing the chicken breasts in a tin-foil pouch and pouring the dressing directly into the pouch. MMM...

I take boneless skinless chicken breasts and cut into cubes and brown in olive oil. I then add a jar of salsa, can of black beans (drained and rinsed) and frozen corn. I eat it by itself or with brown rice.
