Yumm these sound so good! I'll have to try the Pepperjack cheese. I bet it would be great with some southwestern chicken pieces too.

I had some fun with tirtillas and cheese today, too!

I needed something a little more diverse, though, so I dry-sauteed two small corn tortillas until slightly crunchy, then topped them with chicken, potatoes (1 small yukon gold boiled, then fried in a tsp of olive oil with spices), a bit of cheddar, salsa, and a dab of RF sour cream.

It satisfied nearly every craving in the book, and helped get rid of my aches and pains.

I love, love, love Mexican and I am always looking for a way to eat it without completely blowing my daily calorie intake. If I go out for Mexican I usually blow it with chips, cheese dip and margaritas. So, making Mexican at home is always the best option for me. This is something I will definitely try.

I am ALWAYS on a diet. So between all the oatmeal, yogurt and mushy microwavable meals, sometimes I'm just DYING for something big and fat to sink my teeth into...that won't make ME big and fat in return.

After craving Mexican food all weekend--and being taunted by the taco restaurant just outside of the ski resort where I was staying with my family--I was inspired to make these quesadillas for lunch today. And my life changed forever.

Try my recipe! You WON'T regret it! (And neither will your hips!)

Serves 1. Serving size = 2 quesadillas*

* Of course if you're not THAT hungry, you can always cut the recipe in half and make 1 quesadilla. But I'm a hungry broad.

Ingredients:
- 2 large Rosemary (or other flavor) tortillas from La Tortilla Factory (hard to find, but available on-line...they're only 100 calories each!)
- 1/2 a block of Cabot Reduced-Fat Pepperjack Cheese
- salsa (I used Whole Foods brand fire-roasted salsa...it was PERFECT. But I'm sure any brand will do!)

How to make AMAZING quesadillas:
- Lay out each tortilla.
- Slice the cheese into (approx.) quarter-inch slices
- Arrange the cheese on ONE SIDE of each tortilla and then fold over.
- Heat a pan over medium heat.
- Spray lightly with cooking spray.
- Place quesadillas in pan and COVER. Wait a minute or less. Then UNCOVER, flip, and RECOVER.
- Repeat until you can feel the insides of the quesadillas are softened (yes, this means you're going to have to poke at it...who says it's bad to play with your food?)
- Remove from pan. Tortillas should be browned slightly.
- Cut into wedges and plop 2 tbsp. salsa in the middle.
- Finally...and this is the most important step...EAT THE WHOLE DARN THING!!

These turned out crunchy, chewy, cheesy and melty...just like on the Taco Bell commercials.

This ENTIRE recipe cost me only 490 calories (that means only 245 for you wimps who can only eat one!) Plus it was bigger than my head and better than any restaurant quesadilla I've ever eaten...including the Applebee's Weight-Watcher's Chicken Tortilla melt--my version is TWICE the size, and has only TEN more calories, and the SAME AMOUNT of Weight-Watcher's points. Ummm...I'll take my version, thanks!
