I'm glad you liked it Angela!! I also like pumpkin spice so I can see why it also worked. I'll try it with that next time.
I am getting some great ideas here from everyone! I did not know butternut squash is good for your lungs either!

| I used to smoke and did a great deal of damage to my lungs, A dr told me butternut squash is very healthy for your lungs and could help me repair some of the damage and help reduce my odds of getting lung cancer. I cut it in half with a sharp knife, scoop out out the seeds, cover with alumminum foil, bake at 350 for about an hour, more or less depends on the size. It gets really soft, then I scoop it out with an ice cream scooper. I mix it with a mixer with splenda, cinnamon, ginger, cloves, you may also use allspice or pumpkin spice. Then I put it in the fridge or freezer. If I put it in the freezer I don't let it stay in there long because it gets to solid and you can't eat it right away. It is very similar to pumpkin pie like this.

| I cut a slip in a whole butternut squash and microwave it until it is soft. Then I peel, remove seeds and mash. We eat it often and love it! It is also wonderful pureed in a skim milk based soup with some onions and chopped carrots.

AZUCARMORENO,. i tried this last night and it was soooooo good, it taste almost like sweet potatoes, i didn't have any all spice but did have pumpkin spice and it was good...i will make this again... mmmmmmmmmm thanks for shareing it with us...

I don't measure anything, I just eyeball it, but for a whole butternut squash I would use about a cup of brown sugar and just enough butter or country crock spread to coat the squash without making it too greasy.
The spices depend on how much you like each. I like all spice better than cinammon so I put more of that (I'd say about a tsp of each may work then you can decide if you like more or less...)
It is very easy to do and tastes great!! I hope you like it.

| That sounds really good. I tried this recipe I saw on food network TV where they cubed the butternut squash and then sprinkled it with brown sugar, cinammon, a bit of all spice and butter and bake it. It is absolutely delicious. I substitute the butter for Country Crock Light Spread and it tastes really good.

| recently I have been buying squash at a local open market. I usually peel them first and then cut them in half. I use a spoon and some muscles to get the seeds out. Then I cut it into pieces and put in hot water. Then when they are soft I put them in a bowl and use my hand electric mixer. I add a bit of margerine and lots of cinnamon. It is AMAZING!

I roast butternut, sweet taters, potatos and onions all together with a little olive oil, salt, pepper, and oregano and garlic.
I do not peel the butternut. I cut it in half, scoop out the seeds, then just slice it up about 1/2 inch slices or a little thinner. I do the same for the sweet taters and potatos, just they are a little thicker, the onions I wedge. Good with cauliflower thrown in there too

| I have heard of cooking it like an acorn squash, in the oven and scooping out the "meat", but not making fries! It sounds really good and I loooove butternut squash. Everyone is right,it is hard to peel, but you do have to get the tough skin off.

the butternut squash fries she is asking about is one of my recipes,,,
the squash is hard to peel , i use a potato peeler also..i have never heard of poking holes in it and putting it in the mico. for a few mins. maybe i'll try that next time i make them...

| I've never made squash fries, but if they are like sweet potato fries they just need to be peeled and then baked in the oven. I use a little olive oil on the sweet potato fries, and they are better cut a little bigger than regular size french fries. A nice dip made with non-fat mayo and curry is better on these than ketchup or other condiments.

I love butternut squash. It's actually easier to peel if you poke a couple of holes in it and microwave for a couple of minutes.

It takes patience to peel a butternut squash ! I usually slice it in half lengthwise, the takes strength, patience and a BIG sharp knife.Scoop out the seed and use a potato peeler for the skin.
Not sure how to make fries....do you?? Do you bake them ?
