Even though I'm going to Thanksgiving somewhere else, I'm grilling a turkey at home so I can have leftovers! I love Alton Brown's recipe for Honey Smoked Turkey on the Food Network website. You brine it in a simple mixture of water, kosher salt, honey, and vegetable broth, cook it on the grill with a "smoke bomb" made of aluminum foil and some wood chips, and let it rest an hour before carving. This will be the second time I will be grilling my turkey. It is the bomb!!!. I start with a brine, water, kosher salt, chicken stock, basil, sage, rosemary,garlic just what ever herbs you like, brine for 24hrs, let it air dry in the fridge for 12hrs, then grilled over wood coals for approx 4-5hrs, or temp 180%
