If you find rice pasta (many of the larger chain stores carry it in Canada), the brown rice pasta is better than the white rice pasta. White breaks really easily, not good for twirling. And one key is not to over cook it and use LOTS of water. I actually prefer the taste of it to wheat pasta, but have switched back to whole wheat for the fibre.

I have also made pizza dough with spelt flour and also bread with spelt flour. I found that in a bread maker you had to use a "quick" recipe because the excessive kneading didn't work with spelt, and I used a "light brown" with some bran, but not all the bran. Most likely to find this in a bulk food or health food store.

There are noodles and breads made of rice and other things, not just wheat.

Thanks for all this. I am starting to eat more oats, soy, and very often I heat two corn tortillas on the stove and add some cheese, sweet peppers and tomatoes.

You can make muffins from oat bran and no flour (there's a recipe on the back of the quaker oat bran box that I make substitutions for that's really delicious). For pizza, you could try using toasted corn tortillas as a sort of mexican pizza.

You can buy ready-made breads made from rice flour and you can buy rice pasta that's gluten-free (sometimes it's right next to the pasta and other times you can find it in the health food section). You can find rice and soy flours in the baking section that would allow you to make your own baked goods and similar things--try searching for gluten-free recipes and I'm sure you'll find many options.

Thanks, I'll check into the recipes.
The ones I miss the most are pasta and bread, pizza. But I also have to watch the cheese when it comes to pizza.

Recipes for what type of dish? There are alot of vegetarian recipes that don't include wheat and many can be found at SaprkRecipes.com.

I'm having some trouble with wheat products. Looking for decent recipes that don't have too much wheat.
