Steam zucchini and frozen corn (fresh if you've got it but not really in season any more) with a bit of oregano. Add chili poweder diced chiles or jalapenos for some kick.

I'd second the rice. When we had a Mexican student with us, we'd make a really good, easy rice recipe. Put rice (enough for as many servings as you're making) into a frying pan with a tiny bit of oil and fry until the rice is translucent (this step also keeps rice from sticking). Add peppers and onions and whatever else you want to the pan and cook until onions are translucent. Add spices (I usually use about 1 tbsp tex mex spice) and liquid (water, broth, canned tomatoes) and cook until the rice is done. So yummy.

How about Spanish rice made with brown rice and a salad and fresh fruit ( or just add fruit to the salad.... )
