stuck in a dinner rut... help

I love to cook, so I wouldn't say I have the same mindset as you, but I, too, have nights where I just might not be in the mood. One of my favorite easy meals is to grill a chicken, slice it up, then throw it on a bed of greens, with chopped tomato, cucumber, egg whites, and strawberries.

If I'm so lazy that I don't even feel like grilling the chicken, I'll just add cottage cheese for my protein.

Some days, when I'm SUPER lazy, I'll go for a veggie burger (Morningstar brand is my favorite), but I always find that while veggie burgers satisfy me for lunch, they don't satisfy me for dinner, so I usually regret that choice, lol.

I'm also big on leftovers though. It's just my husband and myself living here, but I'll still cook for four, so that we can each have the meal the next day for lunch or for one of the dinners over the next few days if I don't feel like cooking one of those nights.

Well my boyfriend and I like to cook together but when he's out of town I don't shop as much or make as many "meals" unless it's something that will be good as left overs the next day so I'm really making more than one meal - for example last night I had a spicey turkey italian sausage, some brown rice, and steamed zucchini with a bit of salsa on it. Made enough for left overs and it was all very easy to prepare. Will be having it again for dinner tonight. Earlier this week I cooked a couple artichokes so I had those for two dinners, along with a whole wheat pita filled with hummus and sliced cucumbers both nights. Easy breezy.

lol i'll throw a fit if my fiance and i dont eat together! im keen to quality time. my fiance and i are the same when the groceries we buy are out! we'll invent the oddest things to eat withwhatever we have at home, and i find that sometimes its actually healthier lol

last night we got really creative!!!!!!!!!!!

So it's 5:50-ish pm and I will be off work at 7. Then I will be grocery shopping to get it out of the way, and not have to do it over the weekend. So I need ideas to add to my grocery list!

I have been stuck in a major dinner rut. Look, I'm lazy and don't want to cook a lot every night. Sorry. Sometimes I just eat a Peanut Butter sandwich with some chips. Last night I made ravioli and had a breaded chicken patty with it. I know that sounds disgusting but it's actually really good. I like to make stuff that's easy and not too horrible for me.

I've lost 10+ over the past year just by incorporating water drinking into my days, so I'm not too worried about eating super healthy meals. I live with my fiance, we are 25 and 26, no kids, so it's not like we have to be really creative with what we cook. We don't eat together either, we just each make what we want.

So here's what I want to know. Is there anyone out there with the same mindset as me? And what do you eat for dinner when you get home from work????
