| Stevia is challenging to bake with because of texture issues. It doesn't have the same "bulk" as sugar or the moisturizing effect on the baked product, so recipes have to be adapted carefully or you can use recipes specifically designed for using either stevia powder or stevia liquid extract. When using stevia straight to sweeten drinks or food to eat directly, I have to be careful because if I add too much, it has an aftertaste.

Yes, I have seen stevia in the health food shop and have wondered what it would be like.
I don't add sugar to anything much except coffee when I drink it. I have bee using a sugar product from Finland called Fruisana. It has a lower GI ranking than regular sugar and you need much less of it. I have only used it for coffee and I tried it once or twice on strawberries and it did enhance the flavour of them!
I would like to try it in baking, but I rarely bake anything. Some times I do, so when I bake next time, I will use it instead.
I just don't trust artificial sweeteners and I don't like the taste and aftertaste of artificial sweeteners.

Hey there! I'm curious... How many of you have heard of a herb called Stevia? How many of you use it? I am surprised to see so many receipes on this site that use Splenda. From my research, it's just no good for us!
I urge you all to try Stevia. It is 3 times sweeter than table sugar. It can be found at most health food stores.
