Hi, Thanks for the suggestions. I have heard of Wustof but not Forschner, I am looking in to both. My husband came home with a 3 pack of Chicago Cutlery he got on clearnace at Kohls for under 20, so we are ok for a few weeks til they go dull. Good to get suggestions from people who use them for a living everyday!

These guys are right - Buy very high quality knives, once, and you will never need to replace. Personally, I am a Wusthof (Trident) Classic man, using both a sharpening steel and a hand held ceramic hone to keep them sharp. For under $200 you can get a set with block that will last a lifetime.

Hi I have been a chef for more than 30 years and have used most knives on the market Henkles are good knives but you are buying the name I recemend Forschner they are very good and not as pricey as JA Henkles and get one with the sanisafe handel also purchess a dimond steel to hone the blade with you will not need to use the steel until the blade starts to go soft but then only 4 to 5 licks on each side will bring it back, go to a knife shop they have them in most malls. I have a Henckles Professional "S" series santoku knife and I LOVE it--I use it every day. Someday I hope to get more.
As far as sharpening, I just use one of those file type things between each use. I've heard that sharpening yourself isn't a great idea, and that you should send your knives out. I'm sure a lot of people disagree with that, but Alton Brown has yet to steer me wrong (and who really wants to mess up the edge of a 100 dollar knife?). I've used mine daily for over a year and so far, it doesn't need sharpening.

Hi! We desperately need to buy new knives. We (I) got sucked in and bought a set from Pampered Chef and they didn't live up to the hype. The sharpening cases they came with don't work and I have ran them through two different knive sharpeners and they still are very, very dull.
We have a mismatch assortment now mostly small from clearance at Target and wheverever, but I would live to invest in a good set.
I have done some research and have found The JA Henckles/Twilling (the one wiht two guys on the package) are the way to go.
Does anyone have any experience with these or recommend another brand? How about a good sharpener? Electric or manual?
