I have been a chef for 30 yaers and I have one of those indoor table top grills (like the Gorge Forman grill but less expensive)and you can put a marimated chicken breast or thigh I perfer the thighs they stay moist on and cook it in less than 10 min try this with some bell peppers and zuchinin sliced thick long ways season to taste the veg cook in about 4 min served with l/o rice and you have a full meal in less than 15 min

My favorite easy meal is Microwave Turkey Chili.
It's low in calories and fat. I have submitted the recipe in Sparkrecipes And it only takes about 12 minutes to cook from scratch!

My favorite quick meal is to whip up a salad using all my left-overs on a bed of greens and topped with Peach Salsa. I usual heat some of the ingredients so there is some cold, some hot, some crunchy, some not. They are great fast meals and tidies up the leftovers.

I love to slice up a zucchini, and chop some onion, cook these up in some Pam. Add this to some brown rice- left over or newly cooked. I can eat this as a meal, or add a protein of any kind. Very yummy!

i made a lemon chicken stir fry tonite and it was good. The recipe was in the Kraft What's Cooking recipe mag that they send out. You cut 1 lb of chicken breast into strips and cook it till it's not pink any more and then u add ur stir fry veggies- they call for snow peas but i used cauliflower and broccoli and onions , Then u make a sauce with 2 tbsp of italian dressing,lemon jell0 powder, a touch of garlic ( i use the stuff in a jar-easier to deal with)and 1/2 cup of low sodium chicken broth - u can thicken it with cornstarch or just leave it the way ait is =it's really good- has a lemon flavour - I used diet jelly powder in order to cut calories I hope i remembered all the ingredients- i'll check and if i left anything out i'll get back to you tomorrow and notify you.

I am haaving sauerkraut tonight with turkey hot dogs, and mashed potatoes. I love to cook spaghetti, and cook some shrimp to top it off, with a little butter and lemon and garlic. I have pineapple and cottage cheese when I am feeling lazy!
My favorite easy meal is just to bake a chicken breast with a baked potato, and put some vegs in the microwave. I made the chicken breast topped with salsa and wrapped in foil and baked for 1 hour the other night and it was wonderful!!! I also heat up some beans with some frozen peppers, and some chili seasoning and tomato paste in the microwave, and then put them in a tortillia with a little cheese. Fast and easy and little mess. Hope this helps. I like your thinking.

I love stir fries especially if you buy a pre-sliced mix of veggies either frozen or fresh...add some protein and you have a quick meal! You can also make some Minute Rice too.

My two fav dinners this week were...
broiled salmon, brown rice with almond slivers and broccoli with chinese hot sauce. Mix all leftovers together and take for lunch the next day.
small tenderloin steak topped with sauted mushrooms and onion with dutch yellow creamer potatoes (they're little yellow potatoes and I boil them for about 10 minutes then brush lightly with oil and stick under the broiler so the skins crisp -add a bit of salt - they're so good they don't need butter) and string beans (blanched and tossed with olive oil red wine vinegar and thyme then cooled in the fridge).
the left over steak and onions and mushrooms will be served tonight as a fajita with some green salsa in a tortilla with a side of zucchini sprinkled with parmesan cheese.
When in a pinch for time, I buy a preroasted chicken and a bag of lettuce and add some chopped veggies and garbanzo beans and toss with light dressing for a quick meal.
Or, whole wheat pasta topped with marinara (I slice a zucchini in to cook while the sauce is heating) and a small salad.

I like hearing what other people eat. I get a lot of good ideas that way - it seems more interesting that going through recipes. What do your favorite easy calorie friendly meals?
