LOVE Fresh beets and am off to the farmer's market to get some this afternoon.
I roast mine in the oven. Cut off the ends, quarter them and wrap in aluminum foil, drizzle with a little olive oil and add any herbs you like, I use thyme or garlic or oregano. Roast in the oven on 375 for about 30 minutes, test with a fork for doneness, I like mine a little less done.
Then I cool them in the foil in the fridge and cut them up with toasted walnuts, red onion, goat cheese, or add spinach and a vinegrette, and of course the winter salad version with orange segments is great too.

PS - I wear rubber gloves to peel the beets and usually peel them before cooking.

I've always boiled them unpeeled. Then once they're cooked, the skin peels off easy. (Wear latex or rubber gloves though or else they could stain your hands).

I've only ever cooked them from a can, but cutting out canned foods. Need to know how you cook them when they are raw? Boil or fry or what? Thanks :)
