| I tried it, and was very pleased even though it was a bit of a small loaf. But my kids ate it and loved it, so I'll continue to make it.

| I agree with you. The only thing that needs to be adjusted is the length of time it takes to bake. Mine baked in 30-35 minutes while the recipe called for an hour or longer to bake. The recipe is delicious!

We went to Atlanta Bread Company once and they had low carb muffins. They were exactly the same as the regular muffins except they were baked in a smaller pan and thus, were a lot smaller! I suspect the SP modification was to make slices of banana bread that were more calorie-friendly!

| I checked the recipe against the original one at BettyCrocker.com and found the difference. The original recipe says to bake it in ONE loaf for 1 hr, 15 mins. The recipe on Sparkrecipes says to put the batter in to TWO pans. It is very delicious but very thin (LOL). It also only took about 30 mins. to bake in two pans. The time given was for all the batter to be in ONE pan. Go figure. Anyway, I'll be making it more often. Give it a try but take my words of advice about how long to bake it, etc. Let us know if you try it.

| I haven't made that recipe, but what you could do is sparkmail or leave a question/comment on there sparkpage and hopefully they will help you on this.

I just baked the Monkey Tail Bread and had some questions. It only came out 1/2 the size of regular loaves of banana bread and only took half the baking time that was stated on the recipe. I checked my baking soda and baking powder and they are not outdated. I wondered if any of you had tried it or had the same results. It would have a nice BIG loaf of bread if I hadn't been instructed to put the batter into two pans. Haven't tried it yet but it sure smells good.
