Love the lettuce wrap idea. I'm trying to think beyond breads and tortillas so that's appealing. I tend to cook extra meat for other uses but I like the idea of extra veggies - I tend not to really do that. Good suggestions!

Katie, I'm a "planned leftover" type of cook too. I'll cook more meat, starch or veggies than I need so that they can go into a meal later that week.

A couple of favorites different from what you guys have already said -- leftover roasted red peppers into bisque, last bits of leftover meat into hunter's stew, leftover veggies into pasta primavera, leftover grilled salmon into sinfully awesome salmon & shrimp dip, leftover chicken or shrimp into lettuce wraps!

i throw leftover veggies into casseroles, use leftover chicken to make fajitas, wraps, casseroles, etc. leftover everything goes into spagetti sauce, homemade pizza and chili. potatoes become homefries, latkes or sheperd's pie...the possibilities are endless. i usually cook extra of certain things during the week so that we'll have the leftovers for lunches & to make into other meals, that way we don't have to repeat steps.

Hi,
I've been getting creative with left overs lately and wondered what you're favorite "reinvented leftover" is?

Here's my latest...
Made turkey burgers last night. Knew the left over pattie would be dryish when reheated so today I took the pattie to work in tupperware along with fresh corn (also a left over, cut it off the cob) and fresh salsa. Heated it for a couple minutes in the micro and the juice from the salsa kept it moist and it was a yummy dish!

Here's another...last saturday night I made steaks with sauted mushrooms and onions and had left over mushrooms and onions so sunday morning I made an omelet and used the mushrooms and onions as the filling. Delish!! Just make sure to warm them a bit before use so they don't go into the omelet cold.

Other ideas? Show me your creativity!
