| I use 2 1/2 cups whole wheat flour and 1/2 cup All Purpose, the dough just stretches better because I think the gluten is different, not sure. You could use all whole wheat. This makes 2 big thick pizzas or 3 or even 4 thin crusts and keeps in the refrig. wrapped up for over a week. I add hot water, yeast, honey, and olive oil.

I made one using white whole wheat flour and bread flour. It was quite good and nearly fat free.

I just made some Whole Wheat Pizza Dough this weekend. I simply used a regular Whole Wheat Bread recipe. I had to halve the recipe and it made 2 pies (half the dough is still in the freezer).
The recipe I used was from a High Altitude Baking cook book, because I live in Denver and have had a killer time baking with some recipes.
