ORANGE AND HONEY SAUCED CHICKEN

NUTRITION:
Calories: 142 Fat: 3 g. (1g sat. fat) 45mg cholesterol, 209 mg sodium
carbs: 12 g. 1g fiber; 17g protein

INGREDIENTS:
4 small skinless, boneless cicken breast halves; (12 oz total)
NOn stick spray coating
1 small onion finely chopped
1 clove garlic, minced
1/2 cup reduced sodium chicken broth
1/2 teasp. finely chopped orange peel
1/2 cup orange juice
1 tablesp. honey
4 teasp. cornstarch
2 teasp. reduced sodium soy sauce
Hot cooked rice (optional)
Orange slices (optionnal)
Fresh Parsley (optional)

1.Rinse chicken, pat dry with paper towel. Spray skillet with nonstick coating.
Preheat over medium heat. Add chicken and cook for 8 - 10 minutes, turning to brown evenly. Remove from skillet and keep warm.

2. Add the onion and garlic to the skillet , cook until tender.
Stir together chicken broth, orange peel, orange juice, honey, cornstarch, and soy sauce - add to skillet. Cook til thick and bubbly. Cook 2 more min.

3. To serve, spoon some of the sauce over each serving. If desired, serve with rice and garnish with orange slices and parsley.
Makes 4 servings.
