I just did this one for a cycling meeting we are having at our house tonight and it is yummy. I took 5 pork loin boneless chops and cut most of the fat around the edge and then added 2 cups of Bar B Q sauce and one large onion quartered and sliced and let it sit all day on low and then added it to kaiser rolls or what ever ones you like .... if you have a small crock pot then you can use 2 chops and cut back on onion and sauce..... Even my picky eaters are chowing down on it : )
Calories 247 Fat 6 Carbs 32 protein 16 (no bun)
May be different numbers depending on the sauce you use and with the bun added

I JUST STARTED USING MY CROCKPOT...I WILL BE TRYING SOME OF THESE recipes TOO!!

Lots of good ideas. I like to use my crockpot. It's so simple and when you get home at night supper is already cooked. Gotta love that.

I'll be trying out some of these ideas.

That taco soup sounds good! I just added this thread to my favorites so I can find the recipe when I want to make it.

We like to do Taco Soup. Brown 1 pound ground beef ( we use 4% fat kind) in pan then transfer into crockpot.
Add to Crockpot with meat:
1 can corn kernals (do not drain)
1 sm can tomato sauce
1 can kidney beans (do not drain)
1 can any type stewed tomatos (we like the one with green chilis or with jalapenos) (do not drain)
1 can chili beans (do not drain)
1 pack taco seasoning
1 med. onion diced
Let cook for about 6-8 hours on low (you can always do it on high but shorten time to 3-4 hours) we prefer it on low so that the flavors have time to blend together..... once it is done you can serve it over corn chips with cheese and sour cream (how the family eats it ..... me I put reduced fat cheese and that is it .... not sure on the numbers havn't put it in yet ... also really good as a left over!!!!

You could do 2 chicken breasts & a can of 98% fat free cream of chicken or mushroom soup & serve with rice. The chicken comes out so tender.

Also 2 chicken breasts with a favorite BBQ sauce, shred the chicken when done & you can have pulled chicken sandwiches.

There's a pretty good library for crock pot recipes at southernfood.about.com.

In the fall & winter, I do a lot of hunter stews, stewed chicken, thai meatballs, asian ribs, those types of dishes in the Crockpot (try to use it weekly).

Thanks for the receipes, this helps me out a lot. It's kind of hard to think of meals that can go into the crock pot, but this helps.

Crockpots are great for slow cooked meats or meats that tend to dry out. I always layer the bottom of the pot with the base veggie (onions, potato, etc.) which seems to result in better dishes.

I just did lean pork chops slow cooked with 1/2 C chicken stock, 3 crushed roma tomatoes, 3 gloves garlic, 1/4 inch ginger (chopped super fine), 1-2 large onion, sea salt & pepper, and 1/4 C hoisin sauce earlier this week. The chops can't dry out and you can modify the flavor to an intensity you like.

I also like to do a version of coq au vin (chicken in red wine). I add roughly 4 roughly chopped onions in base of the pot, season well with garlic salt, layer in the chicken pieces without the skin (kids like dark meat), add 1 C chicken stock and cover with fresh chopped mushrooms, a tomato, & garlic. An hour before serving I drain 1/2 of the cooking liquids and add in 3/4 C red wine (use better, rather than cheap, wine) and add sliced bell pepper & fresh herbs.

The kids also RAVE about my pepper beef. Take a cheap cut of beef and brown on all sides in garlic oil. Layer bottom of pot with onions. Lay in beef and add 1/4 C chicken stock. Cover beef with pepper sauce (1/2 C ketchup OR well drained small can of crushed tomatoes, juice of 1 lime, 1/4 C low sodium soy, 2 T each light & dark brown sugar, garlic salt, ginger powder & at least 2 tsp black pepper). Yummy.

Mostly we eat these with only steamed veggies and they're quick, cheap & tasty. Hope this helps.
